Fun fact this cake originated in Jamaica where it was called a doctor bird cake, the doctor bird is the national bird of Jamaica and it’s a hummingbird. L. H Wiggins took it to another level by making it a layer cake using cream cheese. It’s a pleasure to see the South embraced this Jamaican gem.

I love a good piece of humming bird cake. I do little cream cheese rosettes and put a praline pecan on the top of each rose. Easily one of my faves. Possibly tied with red velvet
