Sonic isn't the fastest being (thing?) alive. First of all, the highest speed Sonic could reach was the speed of light, which he can't hold for long, and his usual high-speed is far lower than that.
DC'S Flash reaches 17 times the speed of light.
Now, for Dragonball Characters, we don't really KNOW how fast they actually are, only that they ARE fast. Even back in Dragon Ball, the original series, Goku managed to steal Roshi's sunglasses to not be affected by Tien's Solar Flare, which is a light-attack, therefore should work at lightspeed. This would imply he already could be faster than light for a short time.
Or thinking about the feat of Roshi catching dozen/hundreds of bullets shot at him, without missing a single one. - Sure, bullets are not traveling at lightspeed, but being able to catch them shot in succession by multiple guns with ease, gives him at least the ability to fight really fast, not necessarily travel at that speed.
And their speed only gets faster in DBZ and way faster in DBS.

While Toriyama wanted to end the story with DBZ (which is the reason why he gave it the title Z, as it's the last letter in the alphabet) - DBZ was still a work of Toriyama, as most of the DBZ Material came from his Manga, which he was still working on, while Toei also added additional stuff.
So, what's with GT and Super? GT is, according to Toriyama "a grand side story of the original dragon ball", a side-story is not necessarily canon or non-canon, in the case of GT, thanks to DB-Super, we can say it's probably an alternate timeline like Future Trunks' Timeline, but different. Either Way, Toriyama even designed the main cast and spaceships, and oversaw the production of the series.
As for DB Super, it's way more clear, since Toriyama is credited as original creator and responsible for the story and character design concepts.
And, speaking canon, let's not forget, Sonic's comic, which was shown in the video at ~13:00 isn't even written by Sonic's creators, so, does this make it canon or not? Sonic had multiple authors, just like DC and Marvel Characters. You can't say Dragonball's Source X/Y is not canon, but then saying everything written von Sonic is Canon.
Just like when people look at Super Mario games claiming he's faster than light, and super strong because he did this in that game. Even thou those feats are only true in said game and in non other before or after.
