Brownies
Ingredients:
150 grams butter
150 chocolate 72%
1/2 teaspoon salt
3 large egg yolks
150 grams brown sugar
60 grams plain flour
20 grams corn flour
3 large egg whites
30 grams fine sugar
Baking temperature: 175 °C
Baking time: 20 minutes
Baking time may vary depending on the type and accuracy of your oven.

Do buy a weighing scale that displays in grams. Volume measures have poor accuracy, plus recipe quantities given in cups and spoons are more difficult to scale up or down.

Mine developed hills and caverns while it was baking, The top looking like hills receded once cooled down but the bottom has caverns! So when I cut the brownies they are completely uneven on the bottom. Any idea why?

Hi Michael, I had just use your brownie recipe. It was easy. And very good.

Cause I feel lyk brown sugar gives chwey texture.
Anyone knows if i use 75% dark chocolate bar or 85% dark chocolate bar for this recipe is it ok? And what is the amount of sugar should i use? As i cannot find 72% dark chocolate.
Chef Michael, it looks like an exceptional recipe, as are all your recipes! I believe that their more spongy texture is due to the egg whites which you beat into a meringue. Every other recipe I've seen the brownies are far too dense and I can best attribute it to the fact that they the eggs aren't separated. Could you possibly create an eggless recipe, for these times of rationing due to the pandemic virus...? One last question, how many portions does this recipe yield? Thank you very much.
