TESDA TRAINOR CERTIFIED | Paano gumawa ng skinless longganisa pang negosyo murang puhunan

  • SKINLESS LONGGANISA
    Ingredients:
    MEAT: SEASONING:
    700g Porklean ground finely ¾ cup sugar
    300g pork backfat ground finely ½ tbsp. black pepper
    2 tbsp garlic minced
    CURING MIX 2tbsp anisado wine
    1 tbsp refined salt ¼ tsp MSG
    ½ curing salt ½ tsp meat enhancer (optional)
    1 phosphate food color (Allura red ) as desired.
    1/4 vitamin C powder
    ¼ chilled water
    EXTENDER
    ¼ cup TVP
    1 tbsp ISOLATE
    1 tsp Carrageenan
    ¼ cup to ½ cup water chilled
    Note: In ½ cup water,hydrateTVP for 3minutes then add carrageenan and isolate.
    Note:
    •Garlic powder may be substituted in the level of 2tsp per kilo,which is equivalent to 10grams.
    •Prepare by dissolving 1 tsp of food color in ½ cup of water.This serves as the stock solution to be kept in the refrigerator.
    PROCEDURE:
    1. Select good quality raw materials.
    2. Measure and weight all the ingredients
    3. Mix meat with the curing mix (dissolve in ¼ cup water)
    4. Add the extenders and mix until it dries up.
    5. Add the rest of the ingredients and mix again.
    6. Wrapin paperlyn or cut wrap (2TBSP per piece).Pack in polyethylene bag.
