but why does km change? doesnt the active site change when non competitive inhibitor binds, hence decreasing affinity

Is it the Michaelis Menten Plot actually is a standard plot that can comparing with the certain enzyme that we want to study? And is it we could identify our inhibitor whether is competitive or non-competitive after plotting the graph? Thanks.
