Making rustic, soft, Mealie Meal rotis!

  • Mealie Meal roti incorporates textured maize meal into the roti dough to give a firmer roti that also has additional texture. This roti is great with many curries, most especially fish curry. More old school, this roti is eaten less often than plain-flour roti.
    Ingredients
    1 cup mealie meal
    2 cups water to boil the mielie meal
    2 tablespoon margarine
    1 tsp fine salt
    For doughing
    1 1/2 cup flour
    1 cup water
    1 tbs oil - NB this was omitted in error from the video.

    hi aunty 😊if after we put in the first cup of flour and the dough comes out soft and plyable already not at all grainy, is it necessary to add more water and more flour? pls help

      If you feel your dough is to the consistency you like it then it should be ok. However you will have to also see how the rotis come out. I mixed dough by touch for years and only started measuring after I started this channel...

      thanks alot.......I did such a big blunder cos my consistency was perfect and I went and added a cup of water causing a river in my dish 😭😭😭😭was so sad. I should've just left out the water .....I was under the impression that without extra flour and water, the roti will come out raw🙈🙈
      I did try again and there was no need for more water and flour but I had to cut down quantity drastically cos all my flour finished 😅😅but it came out perfect, it even puffed up while toasting 💫🥳

    My late mum used make this roti everyday. 😢I miss her so much . I make it for my family. Mum never put margarine tho . So I cook it without any oil or margarine.

      You can brush a mixture of butter or margarine with oil (see the dhal roti recipe). Butter alone may make it too brown as butter burns at a lower temperature...

      Yes you can add ghee like you would for dhal roti but it will change the texture of the mealie meal rotis.

    What is Mealie?

      Here in South Africa we have a flour made from maize - that we call maize meal or mielie meal. Elsewhere it would be corn meal.

      @@GaithreeDeviLuckan Corn meal is a different product. The American version of mielie meal is corn flour. I see it more often sold as masa harina in Spanish, in Portuguese it'd be massa de milho. :) Mielie meal roti is exactly like a corn tortilla. It's definitely old school since corn flour tortillas have been made since 10,000 BCE!

      Yes it is indeed very South African, as in the early days the rations provided to indenture labourers did not include flour but mielie meal instead.
