    There really isn't another side to this: that cake is objectively ugly and any reasonable person would be unhappy with the quality of her decorating. The price itself is not objectively unreasonable (although it is well beyond what a cheap person like me would pay), but the end product for that price surely is.

      My sister tried to make a rainbow cake for my 13th birthday 4 years ago, the coloured layers are difficult to get right because depending on what food colouring you use, it will darken when baked, but even then decorating isn’t that difficult, at least have the dignity to admit when your cake wasn’t acceptable and refund them, or atleast make them a better cake 😭

    $80 for a multi layered cake from a small baker is absolutely reasonable (even cheap, have you seen the price of eggs and butter since 2020?). The problem with this cake is that it looks like shit and her customer service was zero.😂

      Agreed! As a home baker making everything from scratch in VA it cost me $20 just to make a plain decorated 6 inch cake so I can easily see $80 for a 9 inch it just needs to look nice and you have to take some responsibility that your cake didn't turn out to be worth the money. You want a customer to come back or at least I do ! 😁

      At first I thought the $80.00 was reasonable, because of the price of baking materials if you bake from scratch and the fact bakers must include their time as a cost (all that time coating a cake in sprinkles.) But that cake....looked like it could have been done by the customer at home. People pay for cakes that look like a professional did it and did something the home cook couldn't possibly recreate. Otherwise, the customer would have made a Duncan Hines mix in a sheet pan, put on some store bought frosting, and some sprinkles, for a quarter of the price.

    To put it in perspective, I recently ordered a 3-layer cake of what looks to be similar size, from a local 5-star bakery run by an authentic French pastry chef. That cake only cost me $56, and it was both beautiful AND delicious. Also, David's cake looked much prettier and neater, and he doesn't claim to be a professional baker. The CakeGate girl's cake looked like it had been accidentally dropped on the ground, and that she was using sprinkles to cover up the damage. So no, that cake was not worth $80, plain and simple.

    Re. The idea of a cake where each layer is a different flavour: Safiya Nygard did that in the lead up to her wedding. The outcome seemed to be that you need to think really carefully about which flavours go together or else the results are either confusing or gross.

      I did this! I did one for Pride and made it 8 layers. Some flavors were lemon, chocolate, matcha, ube, chocolate hazelnut, etc

      I did it for Pride as well! I used Kool Aid for each flavor. It was weird and kinda good. It also cut back on the amount of food coloring you need and the colors were really vibrant.

    When I heard about baking with boxed mixes, my first thought was of Baking with Mimo. She runs a home baking business, but she's very transparent that she uses boxed mixes. I forgot what she adds to the mixes to make them higher quality, but I think she has a recipe on CZcams. I suggest checking her out

      I just mentioned MiMo up there and how she told us this story but didn't go into details... Yeah she uses box mix but just does the oil, eggs and essence plus now filings depending on the cake. Love MiMo. ♥

      Yes! A lot of commercial bakeries actually do what Mimo does. I still will always do scratch cakes, but I’m not running a business and emphasizing great decorating, so I totally get it.

    My mother-in-law made a rainbow cake for my son's eighth birthday. She did eight colors (because he was turning eight), and my son loved it. Looking at the photo of what the TikTok girl did, I think my mother-in-law did better (maybe I'm biased, though). My husband insisted on paying her and she would only take $40 for it, so seeing that picture of an $80 cake I'm over here thinking, "We didn't pay Lola enough."

      I have a small cake biz and depending on the year and location that does sound underpriced but she probably only charged for the ingredients, $80 is too much tho if it’s going to look like that 😅 so sad this situation will only affect the honest bakers trying to make a living

    Truth be told, doctored cake mixes are teh perfect intersection of quality and cost-effectiveness. There are several tried and true recipes that treat box mix more like an ingredient rather than the base, they're easier to make in larger volumes and give consistent results. I will say though, boxed cake mixes aren't usually spongey. If anything, they can be too soft and fluffy. The firm sponginess is usually a product of overmixing or the oven temp being off. I noticed that you baked all of the layers at the same time on different racks. Maybe that had something to do wtih it. I'm just spitballing, but maybe the leavener in the mix couldn't make up for the uneven temperature.

      He didn’t bake the box cakes at the same time he did them in batches. He got extra pans from friends for the scratch cake.

      It’s almost certainly overmixing. It’s hard not to overmix when you’re making a rainbow cake like that and have to mix the color into each layer after it’s already mixed.
      That’s why the better recipes calls for making all the layers separately.

      ​@@HeyLeFay What crossed my mind is that the white cake mix appears to be a member of the velvet family, which is very easy to get spongey by overfolding the mix into the egg whites. I learned that the hard way the first time I tried to make red velvet cake (I experiment with dairy free bakes all the time for my dairy intolerant other half)

    I am a home baker that sells a lot of cakes made from scratch so in my personal opinion $80 is a very normal industry standard for an 8” cake. The fact that it also has so many layers and takes more time with different colors would also bump that price up since you are paying not only for ingredients but also the time and experience of the baker. That said, the cake looked bad!! I personally would not have given that to a customer or at least offered it at a steep discount if I did not have time to remake it. Just my two cents as a baker

      She was out of her league and wasn't humble enough to accept it. I'm not even a baker but even I know:
      She should've smoothed out the buttercream using a scraping tool and spatula.
      She should've popped the cake into the freezer for 15 minutes after icing then literally rolled it in sprinkles so they could be applied evenly.
      She should've used an attachment if she hasn't yet perfected her icing writing. (Ex: an Edible sugar past written in Edible ink.)

    As someone who is a professional baker and makes cakes for people, not only is this ladies attitude *absolutely* atrocious, the fact that she charged that price is OUTRAGEOUS. I am all for “charging what ur worth/for ur time” (hell I even do it myself) but no way that cake’s worth $80! I would have charged someone $20-$25 TOPS, and even then thats being generous.
    I don’t typically participate in TikTok Drama, but this girl needs a reality check- that cake was just not good. For someone who seems to have been doing this for years, I wish the skills would reflect that. Don’t get me wrong, everybody has bad days/cake fails, but the fact that she tried to argue with the customer and pass off that cake as being “what was advertised” instead of admitting the cake was just not good… is just horrible customer service to say the least.
    I truly hope this was a learning experience for her (if not now, hopefully later down the road) as she just did not paint herself in a good light.

    I actually made a rainbow layer cake for Christmas at work one year. I used different liquors (Frangelico, Drambuie, Chambord, Creme de Cassis... can't remember them all) each mixed in a cooled simple syrup and brushed onto each layer while they were still warm after removing them from the cooled pans. I one 2 different $100 prizes for it in the baking contest!

      @@spellbinder3113 yes! I had so many compliments. I used small amounts. For each layer I think I used about 10ml of booze with about 20ml of simple syrup (1:1, sugar: water). I also made the layers in 10"x10" square pans. I didn't have gel colors so they weren't very vibrant. I bought the small, mini-fridge bottles so they weren't expensive. I also found my notes... Red- Maraschino liqueur, orange- Grand Marnier, yellow- Limoncello, green- Frangelico, blue- Creme de Cassis, purple- Chambord. I used black-colored butter cream for between the layers and the crumb coat. I covered that with black-colored sugar crystal. Then I made a small amount of marshmallow fondant, split into the 6 colors, plus white, and used it to make a "Dark Side of the Moon" album logo on top.

    As someone who bakes at home and worked in a bakery for years, I have a LOT to say about Cakegate. But imma keep it short: This is her own fault tbh. I don't know why on earth she thought going public with this was a good idea. Customers have been legitimately mean and rude to me multiple times when I worked in a bakery. They were mean to the cake decorators, too! But never once did we put them on blast on social media...why? Because they kept coming back and spending their money.😅 Its okay to feel upset and other human emotions. But girlie, Your a business owner. You need to make money to survive in the market you are in. I'm more upset that you failed at being a professional than how messed up the writing on that cake is😂

    $80 for a presentable six layer rainbow cake is a good value when you take into account the labor.
    If a home baker - for their own non-commercial purposes - wants to make a rainbow cake, I highly recommend using boxed cake mix with a touch of extra vanilla extract and making your own frosting. I’ve done it myself a few times and this is the winning combo.
    That baker was out of her league and also out of line. So rude, especially when I, an actual average home baker, can do better than what she did.

      Just a better use of time and effort that way. I’ve used Pillsbury, Dunkin Hines, and Betty Crocker mixes, all with the extra vanilla, they’ve always turned out great. I’ve never used the Great Value, so that might have been a large contributing factor here. (He’s allergic to nuts, so that may be what he can safety consume for cross-contamination reasons.) There’s lots of “make boxed cake taste homemade hacks”, but they don’t tend to work for me. The most common one is “use butter”, but butter gardens in the fridge, so if you have a frosting that needs refrigeration (cream cheese is my favorite), the cake ends up tasting dry and hard when served. Use one of those brands of mix, add in more vanilla (reduce the water the same amount), and put the energy and money into homemade frosting.

      David, if you read this make sure to watch out when you make baked goods from other countries. I know there is a big difference between the flours from US, UK and Canada. I have to adapt much of my baking in Canada because I've had disasters following recipes.

      @@Melanierose21122 Yeah, if you're Canadian then our all purpose flour is more like a strong bread flour. I have to buy pastry flour instead of using AP for my pies. If you're up for experimenting you could probably blend flours to get results that work for you.

    Right now you can get a 10in Rainbow Cake from Carlo's Bakery for $64.95, regularly $99.95, not including shipping. That's a bakery with national recognition. If she is buying the cheapest ingredients possible, charging $80 and not making a killing, then she either has huge overhead or doesn't actually know how to run a business. I mean, you can get a 25lb bag of GV flour for $9.

      I will say, she probably doesn't have the same scale as him, and cakes aren't just flour. Eggs, milk, etc. are all pretty expensive rn, not to mention equipment, rent, labour, and other business costs. That's not to say she acted professionally in this situation, just to add nuance. It's tough to compare businesses like that.

    Just a quick tip: for boxed cake mixes, they should be beaten pretty rigorously for 2-3 minutes, it makes the texture better. They're made to be mixed that way. :) (Homemade cake is opposite, where you should only stir until everything is combined to avoid it from coming out tough.)

    I bought a 6in red velvet cake from a cupcake war's winner in my hometown a few years ago and paid about $70 for it. So, I think $80 is reasonable for a CONTEST WINNING CAKE, not for a box mix tragedy of a cake. You can get a better cake than what Kylie is hawking at Walmart. AND with frosting handwriting like hers, she should not be advertising it, she can't do it. She needs to practice.

    I made my niece a unicorn rainbow cake for her birthday one year, complete with rainbow cupcakes and tie-dye style sugar cookies that were unicorn shapes. No idea how much it cost me to make, and it wasn't perfect by any means. But I had a TON of fun doing it and my niece absolutely loved it.

    I know David touched on this but it really is insanely common to use boxed cake, especially when you are buying a custom decorated cake. Most of the time you are paying for a cheap boxed cake with expensive decorations and that’s how the price breaks down more often then not. As far as “quality” ingredients, it’s probably true compared to other custom cakes that will use boxed cake, Betty Crocker cake is definitely the winner when it comes to boxed cake mix but it’s still only slightly better then a beginner baker making a cake from scratch

    As a small tip for everyone just in general: powdered food dyes are a lot easier to work with because you can add as much as you want without having your batter become too runny! I learned that the hard way, my cake was basically still half liquid after being baked...

      I've never used powder but gels are usually great, just not the liquid ones they make stuff so runny if you're using more than a drop

    You can improve a cake box texture by using butter instead of oil too.

      Welllllll, sometimes. Oil cakes are better if it's chocolate or has other ingredients that tend to be dry -- oil cakes are more moist than butter cakes on the whole, so oil is recommended for those flavors. Also, using butter is a problem if you're frosting with something that needs to stay refrigerated, like cream cheese frosting. Butter cakes need to be served at room temperature to have the right texture -- otherwise the butter is too solid and the texture of the cake will be too dense. But some frostings need to be served cold, cuz they start to weep or get runny if you let them get down to room temp. So if you're using that kind of frosting, you need to use oil for your fat.

    The OG cake that the business owner made was…not good looking. It didn’t look worth $80. My parents have paid for custom cakes and I worked at a cupcake/cake shop. They get beautiful results, and great customer service. You did a great job with baking!!

    The "weirdly firm spongy texture" on your cake is from the cake not being cooked enough/correctly. Do not eat a cake that looks that way, as it can cause a stomach ache. It looks nice though ( colorwise ) :). Second cake looked so good! I want it too.

I was in a really bad place in my life, and sometimes watching your videos was the only thing that got me through the day.     You can make flavoured layers, you use jello powder. My mom makes an Easter cake with four layers and each layer is a different flavour and it's amazing.

    whenever I use cake mix, I always mix by hand and kind of under mix it so it doesnt get so spongey and dense, but homemade is almost always better. Also I love the Idea of flavoring each slice a different color, if you stick to fruity flavors you would have like a super fruit punch cake!

    Growing up my mom would buy me an "atomic cake" from a bakery.
    It had all different flavor cakes as layers. Then filling to match. Then covered with sweet whipped cream frosting. That was 35 years ago. At the time the cost was about 50 bucks.
    So worth it, sadly the bakery closed. But the memories remain

    For every layer to taste different, you could buy different extracts at a specialty kitchen store, cake decorating store, or craft store and flavor every layer. If it was flavors like strawberry, raspberry, blueberry, lime, lemon, and orange it wouldn’t be too weird. It would cost you around $15 for a pack of 12 with some brands or at least $3 a bottle at minimum though. I don’t think I’d recommend it. I do think a rainbow cake that had a bit of citrus zest added to the sugar would be fantastic.

    My birthday is tomorrow and my mom is making me the rainbow cake she always makes me. Even having to have bought new supplies to bake it, we spent nowhere near $80 and it looks and tastes better than this thing. She uses powdered Jell-O to flavor and color each layer of white cake. Makes it taste unique per layer, and makes it super moist. I'm looking forward to eating it!

    I don't think you mixed the cake batter long enough. Sounds weird but if you read the instructions you need to mix it for a couple minutes. People think you shouldn't over mix it like most dough/batter but the mixes are different. It makes the cooked cake a better consistency

    I made one with every layer a different flavor! I used boxed cake mix and used Kool Aid for the flavors. I don’t necessarily recommend it, but my friends were impressed? They wanted me to bake it again anyway.

    I’m not saying the girl can’t bake, but she’s clearly not trained and is still learning. A lot of her fondant isn’t rolled out enough, way too thick and dry, her buttercream is too soft when she’s using it, and like duh, wear gloves girl. Not to say she isn’t talented and doesn’t have potential, she does, she just has to humble herself until she reaches it. Too much sass for that stage of learning.

    k heres the thing... bakeries that i've worked at use cake mixes but they're industrial sized, like gigantic 40lbs sacks of dry ingredients, and you can only buy them with a wholesale buisness license. they are professionally made for professional quality buisnesses, not betty crocker cake boxes you can buy at the dollar store

    4:31 for sure. When I first got into cake decorating I bought Super Moist cakes and the pick up was a nightmare! I use a simple/easy white cake recipe I found online that is I think 5-6 ingredients OR Jiffy! Lol those cheap $.50 ones? Betty Crocker, Pillsbury, etc. too moist, to fluffy for decorating and tend to have strong flavor profiles that don’t lend well to additives. However Jiffy bake mixes are simple and the cake density is so much more sturdy. You can add things like chocolate chips, fruit, or other flavors and it won’t compromise the texture or chemistry too much. By a bunch at Walmart, they are less than a dollar and perfect results every time!

    Hi David :3 i was wondering if you could include the prices of the ingredients you bought, just for us to judge the price of these cakes and wonder if its better for us to do it by ourselves or buy it instead. of course the cost of just the store-bought ingredients does not include the cost of Labour, Time, Equipment and other stuffs. so i think this would still be beneficial for some who would rather do it themselves or even after seeing the cost, they would think twice to see the full raw cost to see if its even something worth it. this is just a suggestion of course :)

    Jemma's costs around $100, but it honestly feeds a lot of people. Besides, at least you know it'll be tasty and guaranteed to be made with top-quality ingredients. I've been to her shop in London and everything we tried was delicious. I've also made quite a lot of her recipes before and, even though sometimes they're a bit too sweet for my taste, they're all very easy to follow and make for an impressive result - especially the cupcakes.

    You should do some reading on the best kitchenaid attachment to use. The beater is better for frostings and batters, the whisk is good for merengues.

    i think you overmixed the box cake mix, you should only mix it until it is combined, and avoid going beyond because that's definitely what caused the tough texture and probably contributed to those air channels in the final cake
