We made them 2 different ways- 1- two layers of filling in ours is a mix of vanilla custard and homemade vanilla bean frosting. Custard base, frosting, then custard and frosting. The 2 way - mix both the custard and frosting together, combining it fully, then put that mixture in. I liked the first kind my mom liked the 2nd. I was lucky to grow up with my great-grandmother, and she taught me how to cook from scratch. Our family came here from France (on my mom's side, I'm 3rd gen). My dads side came from Ireland, Im 2nd gen on his side. Sadly, I lost my great-grandmother when I was 9. Only a few years later, my dad passed when I was 11. My mom just passed away on February 11th of this year, less than two weeks before my great grandmothers birthday. My son is 3, and I am teaching him everything they taught me.

I do not use white sugar to make the crispy layer because it may taste bitter if it turns brown. Rather, I use brown sugar so that I do not leave it on the fire for too long.
