I have seen 5/16 pipe somewhere to but I can not remember where. Pretty sure it wasn´t an ice machine because I don´t work on those.
I use viper wet rag instead of hot block

And also what size of the copper pipes and with what solder are they welded to the stainless steel sheet?

Is there a reason you use a air acetylene instead of oxy acetylene torch? I’m new to the trade and curious.
Oxy acetylene is bulky, air acetylene just one bottle easy to carry, I do have oxy acetylene I use it to seal leaks on evaps flame is small to do this kind of job, most work just one bottle is enough...
They usually have the model number in the back as well
