    Egg Bhurji is a dish popular in the north and western India and Pakistan. It is often confused with scrambled eggs and the Parsi dish akuri but Egg Bhurji is a different dish in totality.So watch and learn how to make Egg Bhurji at home with chef Varun Inamdar only on Get Curried.
    Ingredients
    3 large onions
    3 large tomatoes
    4 green chillies
    1 inch piece Ginger
    2 tbsp butter
    2 tbsp vegetable oil
    Salt as required
    1 tbsp red chilly powder
    1/2 tbsp turmeric powder
    1 tbsp pav bhaji masala
    Handful of coriander leaves
    6 large eggs
    Method
    - Chop onions finely
    - Add oil, butter and onions and allow the onions to sweat
    - Chop chillies and ginger and add it to the pan
    - chop tomatoes and add into the pan
    - Add salt, turmeric, red chilli powder and pav bhaji masala
    - Mix everything
    - Beat the eggs add salt and put the eggs into the pan
    - Egg Bhurji is ready to be served.

      Yeah, that's true indeed. I'm from the UK but Indian food is probably overall my favourite. Variations on bhurji have been a mainstay in my breakfast repertoire for at least the last couple of years since I discovered it, albeit with less oil and eggs than this since I just make it for myself. I wouldn't say that I'm a good cook in general, but the stuff I do make usually turns out pretty well. Masalas used properly are a gift to the world.

    I followed the steps by Varun and egg bhurji was amazingly tasty it brought a smile during Corona times when we all are quarantined, It reminded me of PAV and BHURJI I used to have in Bombay in 1990s . Varun thanks for sharing the recipe and your positive energy

    I live in Boston and was craving egg bhurji and never created it on my own since I lived in Mumbai and you get it like every street corner. I love how easy it is to make and love the taste. I didn't had tomatoes so I added capsicum instead and loved it. Thank you.
