Smoked Spare Ribs | Old Country Wrangler

  • Rack of Pork Spare Ribs trimmed, membrane removed and seasoned with store bought rub:
    Lemon Pepper
    Cow Cover
    Honey Hog
    Spare ribs were set out at room temperature for approximately 30 minutes prior to smoking.
    I started a fire on my Old Country Wrangler using Post Oak Splits and the fire was started using Royal Oak Charcoal Briquettes. Spare ribs smoked for 3 hours at 225-250 degrees. At hour three I began spritzing with a mixture of the following:
    Vinegar
    Water
    Corn Syrup
    Honey
    Hot Sauce
    Ribs were spritzed every thirty minutes as I replaced wood splits. I then wrapped these ribs at hour 4 for 1 and a half hours. I wrapped in a foil boat with a red butcher paper covering. I then removed the ribs from the wrap and placed them naked back on the smoker for the remainder of the cook in order to let the bark dry out again. Total cook was a bit over 8 hours.
