Smoked Black Angus Chuck Roll

  • 14 LB. Black Angus Chuck Roll separated in half. Binder used was Mustard and Pickle Juice. Rub for meat was Black Pepper, Kosher Salt, and Lawry's Seasoned Salt. Started a fire on my Weber Kettle 22 inch with Smoke n' Sear attachment filled with Royal Oak Briquettes and Hickory Wood Chunks. Placed 3 chunks at the bottom of the fire basket when building the fire. No water in trough. I spritzed after the first three hours after conducting the scratch test and not being able to remove any of the rub. Meat smoked for a total of 9.5 hours before being probe tender. This is an excellent alternative to smoked brisket. Enjoy!!!

      Indeed, working on it now, previous homeowner had the smoke alarms hard wired in with the home protection system. I am working to get these removed in lieu of the stand-alone battery type as we speak. Thanks for the engagement!

      Thanks for the engagement. Can’t be afraid of these larger than life cuts of meat. I love brisket being a native Texan, too much can be overwhelming sometimes. Wanted to show others what else is out there. Again, thanks for your comment, much appreciated!!

      Was pressed for time on a Sunday night. This rested in my igloo pre-heated cooler for a little over an hour. Ideally, if I started a bit earlier, I would have rested upwards of six to eight hours, just got a bit of a late start. Definitely appreciate the engagement, means tons!!

      Not burnt, it’s called Bark. The whole purpose of using the 16 Mesh Black Pepper. For as long as this cooked, if it was burnt, it’d also be bone dry on the interior. Thanks for the engagement.
