Yield: 8 servings
Prep Time: 15 minutes
Cook Time: 60 minutes
Ingredients
3 Tbsp (45 g) melted butter, plus extra for brushing the pan
4 cups (1 L) day-old bread cubes, cut into ¾-inch (20 mm) dice
2 large eggs
1 egg yolk
½ cup (100 g) granulated sugar (caster sugar)
1 ½ cups (375 mL) milk
1 cup (250 mL) whipping cream (35%)
1 tsp (5 mL) vanilla extract
¼ tsp (1 mL) ground nutmeg
pinch salt
½ cup (75 g) raisins, soaked in hot water and drained (optional)
cinnamon sugar, for sprinkling
Directions
1. Preheat the oven to 350 F (180 C). Brush a 6 to 8-cup (1.5 - 2 L) baking dish with melted butter, and pour 3 Tbsp (45 g) over the day-old bread and toss in a large bowl.
2. In a separate bowl, whisk the eggs, yolk and sugar and then whisk in the milk, cream, vanilla, nutmeg and salt. Pour this over the bread, toss to coat, and let sit for about 15 minutes, stirring once or twice. It may look like a lot of liquid, but it all balances out. After sitting for the required time, use a potato masher or slotted spoon to break down the bread pieces a bit.
3. Drain the soaking raisins and stir them into the pudding mixture. Pour this into the buttered baking dish and sprinkle with cinnamon sugar. Bake, uncovered, for about 60 minutes, until the pudding soufflés a little and the top turn a golden brown. Allow the pudding to cool for at least 15 minutes before serving.
The bread pudding can be served warm or chilled.

I overbought loaves of bread for my house two days ago (I bought 2 loaves and someone else bought three loaves and we didn't check with each other). So, I decided to do bread pudding with one of the loaves and using Anna Olson's bread pudding recipe.
It's amazing. It smells amazing and looks amazing and tastes really good.
The taste was very nice. Everyone I shared with enjoyed it. Really good feeling to share. Felt great when see it coming out of my oven.
To think this is my first time baking too (not kidding - cooking, yes. Baking, no). My kitchen looked like it's in a war zone; very messy. BUT I enjoyed the whole experience and good final result.

I made this bread pudding today. It’s the best I’ve ever made. Super easy. I like that Anna states to “ cut off the crust.” My baguette slices were 3-4 days old. I keep them in a bread keeper. I will never throw leftover bread away anymore. Thank you Ms. A
Simplest, inexpensive sweet dessert to make. Can even be steamed in double boiler stovetop. My mom used to bake this, for everyday dessert. I remember her every time I bake bread pudding😘🤗
can we save the ingredient after mixing them all in advance (fridge them 1st), but we will only bake them few days later when guests arrived ?

A delicious recipe, technically called bread and butter pudding. My mother used to make bread pudding, soaking the stale bread in water overnight and squeezing the water out in a clean tea towel, adding mixed spices, mixed fruit and sugar plus one egg and a knob of butter. Then slowly baked it in the oven till it was crunchy on the outside and soft in the middle. This is the traditional bread pudding, sold in English bakerys. X

This is not a bread pudding. Where is the suet, brown sugar and mixed peel? Plus once mixed, you put in an oven for much longer on a low heat. This is more like a bread and butter pudding.
Exactly, this is definitely not bread pudding, it's delicious, but it is bread and butter pudding....a different kettle of fish altogether!

This looks delicious Anna , gonna try your recipe, here in Dominican Republic we make a syrup with sugar, brandy and dash of water , and pinch of nutmeg (optional and pour it on top before cutting it, in fact we make few incisions on bread in order to soak it all in, yum. I wanna try first the one with banana , raspberry an caramel.

They take forever to get to the point of the recipe, it's like... it was a beautiful day the sun was shining, I went out for a nice walk with the dog and then if it hit me! They also used condensed milk instead of cream in the depression era recipe. Who could afford cream? 😁
Hiya Anna, Gorgeous!!! That is a a similar style of bread pudding that we make here in Lancashire England. I'm definitely going to make some later as I have some day old home made Spelt bread. In my local Bengali store they sell sultanas but call them green raisins. They are really big and juicy and packed by a well known, quality Indian food company called, Heera.
