Great processing build and gives me ideas for my own create food processing! I would suggest putting a filter on the other end of the tunnels from the composting filter for the poisonous potatoes that just go into fire or something to delete them.
be careful so that items dont despawn while waiting to be processed! id suggest putting them in a "buffer" chest, right as they arrive from the water streams :)

Only, aren't you getting the occasional poisonous potatoe through? They can't be composted. Are the going to clog something up?
