We dive a lot in NC, and the Sandbar Sharks are a major pain in the a$$.
You should plan a trip to the Frying Pan Tower. Happy to help if you want. Decommissioned light tower 40 miles offshore of Wrightsville Beach, you stay the night on it, and get a ton of fish options. Most of the WR Hogs are shot there, giant lobsters, African Pompano Schools, and the list goes on. Amazing diving on the sholas and offshore wrecks.
AND The late evening just before dark dives are surreal!

I caught a big American red snapper in South Carolina 30 miles off the beach and I was told they're protected fish and I had to throw it back is there a special day that you get to catch and keep for American snapper

Sure did, plenty out there. BTW, if your goal is to try to feed your family, my fish only cost about you about $16/lb. Definitely cheaper than running a boat offshore to catch your own. 😜
After gas, gear, bait, and time fishing is the most expensive way to catch free food.
