The fact that his staff has moved with Conan through multiple network changes says a lot. You can tell he really is a great guy behind the whole horrible boss schtick.
It's also easier to keep employees who are trained and know the job rather than firing them and hiring new people.

My favorite thing about Conan is that it isn't about Conan. It's always been Team Coco. The way he brings the light on many people that wouldn't have ever had anyone show them to the world is completely amazing. Out of all the comedians that have walked, Conan is honestly one of the men I'd want to have dinner with. This guy is so down to earth and a clown. Been watching Conan since I was disobeying my mom to go to sleep. Team Coco for life

I’ve watched this so many times and I will continue to watch it. Not just Conan’s candid flair, but maybe it’s the photographer, maybe it’s when kramer says “you said that,” maybe it’s the phish head card reader who is OBVIOUSLY high. All together it’s fantastic. One of the best remotes. HAnds down. Fire Jordan.
Just a heads up I followed up with Jordan’s winery with the doll, like in shark tank, and it turns out they were doing well but eventually Jordan kept kicking customers out for not drinking their wine properly and they went bust. Eventually Jordan went back to the Conan show.
