생딸기를 통으로 넣어 독특한 모양의 딸기 크레이프 케이크를 만들었어요~
중간에 크레이프를 딸기 모양 대로 곡선으로 넣어 만들어 봤는데 색다른 모양의 단면이 나오는 것 같아요~
버터크림에 크림치즈를 섞어 만들었는데 맛있는 바닐라아이스크림 맛이 나고 굳혔을 때 모양도 잘 유지되서 좋더라구요~
딸기 크기가 작으면 딸기를 꽉 채워 더 넣어도 예쁠 것 같아요~
생딸기가 들어 있어 신선한 느낌과 맛이 나서 좋고 크림에도 딸기 향이 나서 맛있답니다~

▶틀 사이즈 Mold size : 12cm x 10cm
▶재료
달걀 2개
설탕 25g
소금 조금
박력분 100g
우유 250g
바닐라익스트랙 2g
녹인 무염버터 35g
식용색소 (레드, 화이트)
무염버터 250g
슈가파우더 200g
생크림 80g
바닐라익스트랙 5g
크림치즈 250g
딸기 20개
▶레시피
1. 달걀에 설탕, 소금을 넣고 섞고 박력분을 체 쳐 넣고 섞은 뒤 우유와 바닐라익스트랙을 넣고 섞는다.
2. 녹인 무염버터를 넣고 섞고 식용색소를 넣어 색을 낸 뒤 체에 걸러 냉장실에 30분 정도 넣어둔다.
3. 약불에 올린 팬에 반죽을 붓고 넓게 펴 익히다가 기포가 올라오면 뒤집어 살짝 더 익히고 팬에서 꺼내 식힌다.
4. 실온 상태의 무염버터를 부드럽게 풀고 슈가파우더를 넣고 약 5분정도 충분히 휘핑한 뒤 차갑지 않은 생크림과 바닐라익스트랙을 넣고 섞는다.
5. 실온 상태의 크림치즈를 넣고 부드럽게 섞이도록 휘핑한다.
6. 12cm 정사각 틀에 무스띠를 두르고 틀 크기에 맞게 자른 크레이프 1장을 깔고 크림을 얇게 바른 뒤 다른 크레이프 한장을 올린다.
7. 크림을 짜고 딸기를 올린 뒤 크림으로 딸기를 덮고 크레이프를 딸기 모양에 맞춰 놓고 크림을 얇게 바르고 크레이프를 1장 더 올린다.
8. 한번 더 반복해 쌓고 윗면의 크림을 평평하게 한 뒤 냉장실에서 3시간 정도 굳힌다.

100g Cake flour
250g Milk
2g Vanilla extract
35g Melted unsalted butter
Food coloring (red, white)
250g Unsalted butter
200g Powdered sugar
80g Heavy cream
5g Vanilla extract
250g Cream cheese
20 Strawberries

I thought I was the only one who thought this, lol. Yes it's beautiful but WHERE are the crepes?? 6 just isn't enough to actually taste them. It would also be helpful if we were told what size pan to use as well as how much of the crepe batter. The size and amount does make a difference... 🤷♀️🙄

As someone who does not bake much I made this and here are some thoughts:
1. The main issue I had: The strawberries I could get were big and fairly tough compared to the ones shown here. Next time I'll probably slice them thin before adding them. As it would make eating the cake easier and then you can get a strawberry in each bite easier.
2. I didn't use food coloring. As it doesn't add much, it's not good for you, and I'm allergic to it. I could have used natural colorant but I didn't feel it necessary.
3. The crepes were surprising easy to get OK but hard to get very good, as I kept over cooking them. Still, even OK tasted good, the texture was just a bit tougher as they were over cooked and/or I made them too thick.
4. I didn't have any forms so I just used a low, square tupperware container. It worked fine, the cake just wasn't as tall and was much wider and not as neat on the edges. This meant I only had one layer of strawberries. But it also meant that I didn't need to cut the crepes up into small squares.
5. A ziplock bag with a corner cut off worked OK for piping. I did have to use a spatula to even everything out.
6. I'd make just a little bit more cream cheese filling as what the recipe called for was just slightly on the 'not enough' side.
7. The cake got a resounding 'yum!' from everyone and will be made again.
