- Calvin Eng of Bonnie’s in Brooklyn is in the Munchies Test Kitchen making his inventive twist on an elusive fast food classic: a Cantonese-inspired char siu McRib. Based on the McDonald’s sandwich, this version features a classic Cantonese char siu preparation that consists of barbecuing pork and flavoring it with a red-colored sauce. Calvin’s sandwich is made with pork ribs and is marinated with his mixture of flavorings like hoisin sauce, ginger, fermented red tofu, malt sugar, and more. @Chris Camez horse meat is eaten all over the world . one part of the horse the is very special is the fat from inside the horses neck .
@Chris Camez horse and camel burgers are common in the US military. Weekly squadron burger burns were usually 70/30 real burgers to horse/camel burgers. Especially if your squadron just came back from deployment, they gotta use up that frozen crap

I love the addition of mustard in sandwiches. It just gives it another kick to the flavors.
One thing I hate is straight mustard. Only a bit in potato salad or deviled eggs.

I've never seen the technique of setting fresh cut onions in an ice bath. That's very cool.
I've always done that in every restaurant I've worked in, otherwise I'm crying non stop.
@@chkngrl Yeah it’s pretty common. Along with releasing the sulfides it can also help extend the life of the product because unlike at home we don’t cut onions for immediate use, but for use for up to 3-4 days out.
Ice baths are essential to a good fried pickle, too. They'll be soggy if you don't shock the brine out of them prior to battering, and nobody likes a flaccid pickle!
go one step further and have a sugar and vinegar mixture to put your onions in for some quick pickling
