Thanks, now I see the logic.
Instead of amelizing flour with a thermometer, like I do, instead of developing lacto-bacteria in a sourdough starter, instead of adding baking soda or cream of tartar, or egg yolk; instead of frying some yeast to kill it, and then
having to BALANCE ALL of the above you just add a bit of prepared dried powder.
You try the different powders with your specific flour and recipe, to land on the one that works better for your case. It's all about balance.
That makes sense when baking at scale. Or even when getting new brand of flour, so as to reduce uncertainty due to balancing issues.

usually nasa 4 to 8 grams but please check the improver packaging instructions as the manufacturer knows how much is needed to make it effective.
