My favorite buttercream recipe!

  • Delicious, rich and easy buttercream frosting recipe that anyone can make. This is not a crusting buttercream. It is meringue-based so it has a slight shine and chills nicely in the fridge. Takes 10 minutes to make and is fool-proof! Light, fluffy and not too sweet.

      Haven’t done it with frosting before, but I recall my grandmother using a purple/blueish tinted dry to whiten her hair after it’d gone gray!😅

    RECIPE BELOW from “sugargeekshow blog easy buttercream”. She’s kindly put the link somewhere in the comments but it’s the first hit on safari if you type in the above words.
    Ingredients
    24 oz unsalted butter room temperature. You can use salted butter but it will affect the taste and you need to leave out additional salt
    24 oz powdered sugar sifted if not from a bag
    2 teaspoon vanilla extract
    ½ teaspoon salt
    6 oz pasteurized egg whites room temperature
    1 TINY drop purple food coloring (optional) for whiter frosting

      @@betielkfleleyesus5955it’s PASTEURIZED egg whites which are safe to eat because it was already brought up to safe temperature, between 140-160F before they were packaged and delivered to stores

    ❗️ Do not melt if your buttercream consistency looks good, the microwave step is only for curdled buttercream, mine wasn’t and I still followed that step and it became runny :(

      I’m a big fan of tender, fluffy white cakes & her White Velvet recipe does not disappoint! I’ve used it many times!😋🍰 Highly recommend!👍 (FYI- I do leave out a bit of the sugar but I do that with most cake & frosting recipes!😉)

    This has not only become my clients favorite, but my family’s as well! I will only use Plugra unsalted butter and Singing Dog organic vanilla. This is a to die for recipe that everyone should be using, hands down! I have 4 pint containers in my freezer and just set up to make another batch

    Thanks for showing the truth! I always used to wonder that whipped eggs had to form soft peaks and mine was always runny but after adding butter it was always stable! 🎉

      no the swiss part of it is the method of tempering the egg whites. You heat the egg whites and sugar over a double boiler to a certain temperature the whip them and add the butter and that's it. Italian meringue you heat the sugar and water and pour it over the egg whites while they are mixing.

    How do you make it spreadable but not too thin. I find when I make my American buttercream you can see through it and I hate that. How to resolve this issue?

    Reminds me of brightening the washed white clothes with Indigo - a blue coloured powder - added to the final rinse, which offsets the yellowish tinge of clothes 😊

      @@madelyn3073 I don't know about that. But Indigo blue dye is an ancient plant based dye from certain plants domesticated in India and exported to the ancient world of Greece and Rome.

      I love using “Plugra” or Irish butter. European butter has a higher content of fat, making your buttercream more creamy

    If I were to make this frosting which dye would your recommend for a black and red? Trying to make a cake for my daughters bday

      I really like Chef Master gel colors. But you don’t want to add too much red/black or you’ll be able to taste it. I will add a bit of the food coloring, mix it in, then take out 1-2 cups of the buttercream and barely melt it in the microwave, then pour it back in. That should help the colors develop. They’ll also get darker overnight.

    Hello
    I made this recipe and when I put my cake in the fridge all the buttercream got hard 🥺 is this normal? If so what should I do when I make a cake should I chose to eat it as soon as it’s donde decorated or when I put it in the fridge do I have to wait a while for the cream to soften?

      Yes this is very normal, the butter in the frosting hardens up in the fridge. I take my cake out about an hour before eating it so the butter (in the cake and frosting) can come to room temp. I’ve also microwaved a slice for a few seconds, but that isn’t always the best 😂

    You make it look easy but in winter time you have to squeeze the piping bag hard to release the butter cream in order to decorate the cake .

    My Buttercream came out too loose and runny for piping .Sadly, My decoration didnt come out as planned. What would be the reason ?

      Did you follow the microwave step? I did, even though my buttercream didn’t look curdled, and after this step my buttercream became runny. It was perfect and had a good consistency before microwaving, so I think the step must be followed ONLY if it’s curdled.

      Power sugar isn’t grainy. But still swift it beforehand tho to avoid lumps
