Why this is the pasta dish everyone loves, Eggplant Rigatoni

- Made in around 20 minutes, the ultimate comfort pasta meal everyone loves. If you like pasta Puttanesca or alla Norma then you will love this. It's very cheap to make, incredibly delicious and perfect to bring to the table on many occasions. Great for vegans and vegetarians too! (Minus the anchovies) It's usually a great summer dish when the eggplants are in season, and I'm big on cooking seasonal but of course these days they are available all year round.
The flavours of this recipe are intense because of the fried eggplant which is the hero of the dish. They are usually fried in seed oil but as we all now know, seed oils are very unhealthy so I opt for virgin olive oil. Olive oil doesn't heat as hot as seed oils but still hot enough to brown the eggplants without smoking. I prefer to use the slated capers as they hold a stronger flavour, you can however use the capers you like. Mixed with the olives and the anchovies, this dish comes to life.

The very definition of comfort food. Quick, simple, not a whole lotta cleaning and prep, absolutely mouthwatering presentation and with that little touch of anchovies, garlic and chili flakes infused with the tomatoes, you just know it's gonna make some _magic_ happen ;-) Brilliant!

Your eggplants are so firm, fresh with a very white flesh. Never have I seen them in the store so beautiful, even farm markets don’t have these high quality eggplants. A great mouthwatering dish! Thank you, Joel! You are an inspiration!

Eggplant is one of my top favorite vegetables and eggplant parmesan is the one thing I always order at Italian restaurants. If they can't handle that I'll never go back to try anything else. When I was a vegan I used it in place of what people use meat for along with mushrooms and it was fantastic. There's so many things that you can do with it including making a faux bacon. I wish more people would use it in restaurants. One good tip is to find the male eggplant because it has for a few or seeds. If you flip the eggplant upside down and look at the bottom there should be a little round circle instead of a slit. The slit is the female and it has a lot more seeds. The seeds are bitter. If you use Japanese or Chinese long thin eggplants you don't have to worry about this, just when using fat aubergines.
Thanks for the info, I do find that the bitterness has been bred out of the original eggplant, sadly the more bitter, the healthier.

I use to make that a lot with fresh tomatoes when I was not low low carb ( I’m diabetic ) so no bad carb but that is really delicious 👍
Reduce to 60g of pasta and add lot's of spinach.

5 months later... I really like the dish!.I cooked it yesterday and it tastes very good. I can definitely recommend it. A few details were different for me, as I want to consume existing supplies. As pasta I used "Casarecce". Since I still had a 1/2 onion in the fridge, it was also added. The eggplant came from the garden, but unfortunately there was only one. The others are not there yet. Since my wife doesn't like olives, I left them out. That was a mistake! The taste results only from the combination of anchovy, capers + olives. That makes a clear difference. I warmed up a remnant today and added olives, so I noticed this.

Excellent looking dish. Because of your videos I've learned to add anchovies to dishes to give them that inexplicable added taste. Can't eat them on their own, but even my wife says how great the recipes taste with that added secret ingredient. Loved the look on poor Whiskey''s face when he got his treat for being patient! That's it, come on! lol

I find the eggplants we get here are not bitter, (Been bred out) however some can be, try and look for the male eggplants as females have more seed and more bitter.
