I'm so pleased I've found your channel🙂 I was brought up with kioftedes being made with just pork mince, grated onion and potato (Greek Cypriot) but yours look really nice- I like the idea of using both pork and beef mince; I think your Mum's idea of adding red wine vinegar is a nice touch👍 Look forward to making these...and so much more!

Sofia! I'm shocked!! Giving away your poor mother's secrets!!! We make ours almost exactly the same way, although we add some thyme, too. In my family we have a tradition of shaping the keftede like a marshmallow.... round on the sides and flat on the top and bottom. Also after they are fried, we add crushed tomatoes to the pan along with some peas and simmer the keftedes for a little while. We serve them over rice. I would be interested to know if you've heard of any of these idiosyncrasies or is it just some oddity of my people, lol. Nice to see you back. I hope your vacation was as lovely as it looked!! Be well!!!

I know I know but I asked her permission first 😊 we want everyone to make delicious keftedes. Yes we do sometimes shape them like a marshmallow too…I have not heard of the tomato and pea combination though. I have to try this…
I have some keftedes left over so I will make a tomato sauce tomorrow, add the keftedes and serve with hilopites pasta. Keftedes are just the best!
Vacation and spending time with the family was great, nice to be back, thank you. Take care 😊

@@SofiasGrekaKitchen The tomato/pea sauce is delicious but it never struck me as Greek. Especially since it didn't have any cinnamon or clove, etc. I wonder if Yiayia just liked it that way and it was her own riff.
