***RECIPE, SERVES 6-8°°°
2 lb (907g) ground lamb
3-4 carrots
1 large onion
Half a bottle (3 cups, 375mL) white wine
2 teaspoons dried thyme
1 teaspoon dried sage
1 teaspoon garlic powder
1 teaspoon mustard powder
1/2 cup (118mL) Worcestershire sauce
1/4 cup (60mL) tomato paste
1/4 (30g) flour (use more if you want your filling more solid)
water or stock
salt
pepper
a stock cube, or a spoonful of stock concentrate (like Better Than Bouillon), or a few ice cubes of homemade demi-glace from this recipe: • Homemade Demi-Glace
fresh rosemary (very optional)
10 oz bag (280g) frozen peas
2 lb floury potatoes
1 stick (4 oz, 110g) butter
milk
2 egg yolks
2 oz (50g) cheddar cheese
salt
chives (very optional)
This recipe is calibrated for a 12-inch (30 cm) oven-safe skillet, but you could cook the filling in any pan and simply transfer it to a suitable baking dish.
Put the lamb into the pan and flatten it into a disk across the entire surface. Turn the heat on high underneath. While it heats up and starts to cook, grate or finely chop the carrots and onion. When the lamb is brown on the bottom, stir in the carrots and onion with a wooden spoon, scraping the bottom and breaking up the meat as you go.
Keep cooking and stirring until much of the water has evaporated, 5-10 min. When you notice the pan starting to dry out, reduce the heat to medium. When things start sticking to the bottom of the pan again, stir in the tomato paste and flour, and cook for another minute or two, until burning of the fond is imminent. Deglaze with the wine.
Stir in the Worcestershire, herbs and spices (except for salt), stock concentrate or demi-glace, and enough water to cover. Reduce heat to a simmer and cook until reduced and quite thick, at least half an hour.
Peel the potatoes and cut them into big chunks. Cover them in water and boil them until very fork-tender. Drain. Put in the butter and let it melt in the heat of the potatoes. Mash the potatoes, stirring in enough milk to get a slightly looser texture than you'd normally want for mashed potatoes. Grate in the cheese, put in the egg yolks, stir until smooth, then taste for seasoning and add as much salt as you want. (The egg yolks might not be totally cooked at this stage, so if you need to be cautious about pathogens, taste for seasoning before you mix in the eggs.) Keep the mash warm until you're ready to put it on the pie.
Get your oven heating to 400ºF, 200ºC, ideally convection.
When the meat filling is reduced and thick, take it off the heat - the cooler it is when you top the pie, the better. Chop up the fresh rosemary and put it in (if you've got it), and stir in the frozen peas (still frozen). Smooth out the surface of the meat filling, then drop on the potatoes in large dollops. Pull with the back of a spatula to spread the potatoes out toward the pan edges and get everything covered in an even, thin later. If you want, use a fork to make some ridges in the surface that'll brown nice and look pretty.
Bake the pie until the potatoes are puffy and the filling is bubbling, about 30 min. Take it out and top it with finely chopped chives, if you have them. Let cool at least 20 minutes before scooping. - Jak na to + styl

Oh well, meat is meat afterall...
Being born and raised in the early 1950s in a large industrial city in the north of England, shepherd's pie was always a 'Monday' dish, made only when there was leftover lamb from the Sunday roast. Similarly, cottage pie with the remains of a beef roast. Helping mum remove all the meat from the bone and then putting it through the hand mincer (always a feature of the domestic kitchen before the advent of the food processor) is an abiding memory and, probably, the source of my love of food and cooking. No 'fancy' ingredients, just onions, carrots, meat, stock and peas (fresh or canned, but not frozen, as we did not have a fridge or freezer until the late 50s) and into the oven. And, we might have plain cabbage or greens as an accompaniment with lots of pepper to season. Very much a dish of the working class, making as much use as possible of what were sometimes scarce resources. Now, of course, shepherd's pie has been elevated and has become a favourite of even top class chefs. Yours looks delicious and I might well give it a go.
As a footnote, I would love to see what you make of 'scouse', a staple of my home city Liverpool. Another of mum's leftover dishes with lamb, potatoes, carrots and onions, cooked down until it all melted together and eaten with pickled red cabbage and crusty bread.

Grating onions is the most painful thing I’ve ever done but it was worth it.
I just live with my wife so I was eating this for a week and it was great. Didn’t get tired of it at all. Highly recommended
Grate the carrots and onion in the food processor with the grating attachment. Pain free.
I straight up blended everything. I don’t know why he suggest grating honestly. The point is just to get it really small.

For those cooking for one! A great way to do this dish is to make everything the same way but assemble small pies in ramekins. You can bake one and freeze the others. Then you just bake until golden brown whenever you want for the easiest, Sunday dinner quality, week night meal ever.

Just in case, to police Americans calling cottage pie shepherd's pie, even though we don't care because we use what we have usually, which is beef. I've even used ground turkey. Still called it shepherd's pie.
So I was raised vegetarian so when my dad made us Shepards pie he would use lentils instead and called it 'Hippy's pie'.

My mother's style of shepherd's pie: Much softer mashed potatoes (made with a ton of eggs, milk and butter), mixed with a whole lot more tomato sauce, red wine instead of white, and the whole thing is served with mozzarella and fried eggs on top. I've never seen anyone else put fried eggs on top of shepherd's pie, but it's awesome.

I made this! It was a disaster of my own making. Even my potatoes were green and I didn't know until it was time to peel. Turns out powered mashed potatoes work in this pretty well in a pinch. Obviously not as good as what could have been. Thanks for making videos that get me out of my comfort zone. Even with all my mistakes and whatnot it still tasted great.

Also the frozen pea thing is the best trick ever! I was worried that my filling was a bit loose… but when I poured in the frozen peas, it cooled off and thickened up. Plus they added a nice fresh ‘pop’ to the whole thing. I am just so happy with how it turned out.

In Chile (and other parts of South America) there's a very similar dish called "Pastel de Papas" ("Potato Pie" basically). In most ways it's the same except for one really weird (to me, a USA person) detail: the potatoes are topped with an almost disturbing amount of sugar before going into the oven. Yes, sugar; like, for a pan like the one used in this video, probably 4 tablespoons of sugar. They also make a garlic-paprika oil seasoning that goes on top too. Sugar on potatoes took a leap of faith for me, but it's become a family standard because it's insanely delicious.
Wouldnt be surprised if it migrated there from the UK with the mining companies like how the Cornish Pasty came to Mexico.

There is no real recipe! If you want to add 2.. Add 2. Its your choice!!
Grouted the tiles with a Knorr while my stew reduced. With Knorr stock pots anything is possible.
I'd rather use knorr
To be fair I think for our nostalgia a Shepard's or cottage pie is best with a few OXO cubes in it. It's one of those dishes that it best when it's not over done. It's argue that the garlic powder and wine are not necessary but dear God if you don't put worcestershire sauce in you're an animal.
This is going to be one I'll be doing...and soon. Such a great cold weather dish!

This looks amazing, definitely want to try it. One thing I'll add is when I got this mealkit from HelloFresh they had me sprinkle some shredded parmesan on top right at the end and put it under the broiler for 30 seconds (??) until it was gooey and oh my God, it was amazing.
