I really recommend searching for Penn. It’s not a side quest or anything but it’s a really sad/happy moment when you find him. You can get some hints as to where he is from traysi.

51:07 The sun is a "big beam of light". You can reflect sunlight into enemies' eyes to stunlock them in the overworld with a mirror
And, without spoiling anything (on that note, ignore KevRob's comment), there will be couple more missions before Ganondorf... All will be made clear eventually when you go to Lookout Landing. You'll know when it is time to fight Ganondorf, and even when they say so, you don't HAVE to right away if you want to do something else first. (And make sure to cook some Sunny stuff before you fight him, if you don't have any in your inventory already)
I hope he sees this... I really want him to see this last thing... otherwise it may ruin the final battle if u know what I mean....

Very enjoyable video loved the speed run. My favorite shrine was the golf one where you almost got a hole in one and then died 😂
1) Go to the Thyphlo Ruins north of the Korok Forest, do the quest there, and then go to the depths underneath there (make sure to be prepared for this).
2) Go to the Colosseum Ruins north of the Great Plateau, then go to the depths underneath there (make sure to be prepared for this).
3) Go to the Yiga Clan Hideout

And if the last episode didn't confirm that the Light Dragon is Zelda, this one did. Did you actually suspect when you got the Master Sword? "Imagine if the Light Dragon is Zelda. I don't think it is." She might be my second favorite dragon. Of course, her transformation came with a price... Also, if you want to ride her again and fuse materials to your weapons, I would go for her horn, I think it is the strongest. Once you get a claw, horn, scale, fang, or spike from a dragon it will be, I think 10 minutes before her light returns and you can get another one. (Their flight patterns are never interrupted, except when the Light Dragon - a.k.a. Zelda - appears during cutscenes. This is different from Breath of the Wild, where when you get one thing from them, they fly into a portal in the sky and will return at a set time at a set location next day.) Don't worry, it won't hurt her. And though she lost her mind, she retains her desire to help you.

When I was doing the shrine where you have to know the ball into the hole with the swinging cube, I also managed to launch the cube across the room, and the cube landed in the hole, but the ball was nowhere to be seen.

forest dweller weapons when you fuse plants to then they have infinite uses ex: bomb flower on it for infinite explosions

Yep, they were previously a big part of Zelda games and a bigger part of BOTW than TOTK. In TOTK there have been about 5-10 shrines with keys
