CARROT BREAD: Made with no eggs and no oil/Moist & Delicious

- Whether you call it Carrot Bread or Carrot Loaf, chances are you've never seen a recipe for it that is made with no eggs and no oil like this one. It's a recipe that my friend, Charlene, shared with me, and since I picked up some beautiful carrots at the farmer's market, I thought I'd give it a try. I must say the process of making it filled my home with the most amazing aroma, and once baked, I found this Carrot Bread to be moist and delicious and sort of a cross between carrot cake and fruit cake. It's definitely one I'll make again. Read on for the recipe.
First, you should know, my friend, Charlene, bakes this in an angel food pan, which makes for a beautiful presentation. There's no need for icing because the bread is sweet enough. I don't have an angel food pan, so I used two loaf pans instead.
Carrot Bread
4 carrots, grated
2 2/3 cup water
2 2/3 cup sugar
1/2 tsp. nutmeg
1/4 tsp. cloves
2 tsp. cinnamon
1/4 tsp. ginger
1-2 cups raisins
4 cups all purpose flour
3 tsp. baking soda (you may need to sift if clumpy)
1-2 cups chopped walnuts
Place grated carrots in large saucepan. Add water, sugar, nutmeg, cloves, cinnamon, ginger and raisins and cook on stovetop over medium high heat while stirring. Let it come to a boil, then lower the heat and let it simmer while stirring occasionally for 15 minutes. Remove from heat and let cool to lukewarm. This should take about an hour and a half.
In large bowl, add flour and baking soda. Whisk to combine, then add carrot mixture into flour and stir until batter is formed. Fold in walnuts and combine well. Pour batter into greased & floured cake/loaf pans. Bake at 350 for 60 minutes, or until toothpick comes out clean. (Ovens vary, so start checking at the 45 min. mark.)
Remove from oven and let cool 10 minutes before turn pan/s upside down to release carrot bread. Let it continue to cool and enjoy!

Hi Marcy, thank you for sharing this recipe. I was inspired to try it yesterday. After I was mixing the ingredients, I noticed that my mixture not didn’t look like your because I could see the carrots. It came out pretty good except that my carrots weren’t graded small like yours because I used my processor shredder instead of the
hand shredder. To add, I
used some old organic carrots. Everyone in my family liked it.

Those were giant carrots! The recipe reminded me of carrot cake. I make stuff like this and my kids inhale it! Great job!
Carrot cake is one of my favorites, so even though I had never made carrot bread before, I already knew I would love it. I even wondered if I should make a cream cheese glaze to drizzle on top, but I'm glad I didn't because it is definitely sweet enough on its own and would have been too much. Nice that you make things like this for your family. Whenever I do the same, I like to tell myself that it's healthy because of the vitamin A & carotene in carrots. Lol
What an interesting recipe, I wonder what holds it together? Maybe carrot starch and sugar? I'll have to try this. And I like how you put the recipe under the video, instead of making us go to a blog with a bunch of advertising and chit-chat. lol
I found it interesting, too. You're probably right about the starch in the carrots. Either way, it's really yummy. Glad to hear you appreciate finding the recipe in the description box. I find I have to explain how that works quite a bit because there's not an obvious icon on CZcams that says "description box."

Absolutely, you can put less sugar. This bread is very sweet.
how long will this carrot bread last? (shelf life)
Try 325 degrees for more moisture. 325 degrees is really common for loaf breads.

How many cups shredded carrots you had? My carrots are not the same size
I didn't measure in cups. I'm sure whatever size carrots you have will be fine. This recipe is very forgiving.
What does sugar do in baking science? Ok to skip? That’s just too much sugar, no longer can call it healthy
I'm sure you could scale back on the sugar because this bread is very sweet, but I don't know if you can skip it altogether. Perhaps, you could try monkfruit or swerve, I just wouldn't know the amounts.
