    Candied Coconut Recipe
    Ingredients:
    Fresh coconut
    Granulated sugar
    That’s it!
    Directions:
    Remove coconut meat from the shell of the coconut. You can save the water for drinking, cooking, or baking.
    Slice into thin ribbons about 2 inches long.
    In a large mixing bowl add coconut ribbons and sugar. Cover and allow to sit for 1 hour.
    After an hour some of the coconut water will have seeped out. Place a medium pot over medium heat and add the coconut and sugar mixture.
    Heat until the liquids begin to bubble stirring frequently to prevent burning. The liquid will begin to evaporate and you will be left with crystalized sugar on the coconut ribbons.
    Remove from heat and allow to cool spread out on a cookie sheet.

      You're welcome. I'd say about a week, but honestly it never lasts that long in my house. Haha.

      No refrigeration needed, but if you want it to keep longer you can.

    What age of coconut is best for this candy?

      I like to use ripe coconut, but I have dabbled with other stages.

      @@mr.teezee the brown coconuts you buy in the grocery store are 'old' coconuts. You can also find 'young' coconuts w/the fibrous husk still attached and are wrapped in plastic. They typically come from the Philippines here on the mainland. The outer green part must be removed due to USDA rules because it is then considered a 'seed'.

      @@mr.teezee if you live in Hawaii and have access to coconuts from a tree, generally they are harvested after one year, but one could harvest a month or two before. I would say that a young coconut like you would find in the grocery store would not work for this candy.
