My favorite method is stepping on wings and pull up and it’s done
Step on the wings, pull up on the legs. You're left with a breast with the wings attached which is required for identification in my state.

Wing and leg method is much easier
Legs on a grouse are the best part very gamey taste and the gizzard is a great snack as well
