    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the CZcams channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via CZcams videos, her cookbook, and cooking classes.     Made this yesterday! Came out kinda chewy but that's because I got impatient and didn't wait until the oil was at 375. The last batch I made and cooked at 375 came out so crispy perfect. Thanks!

    For the sauce, I didn't use the blender, just put everything in a pot and reduced it. Still so good. Thank you for sharing the recipe :)

    Thank you! I made this for my wife last night and it was perfect. I kept the tofu in those triangles and gave them a light toss in corn starch. I did my own spin on the dipping sauce. Similar but different. White wine, white vinegar, palm sugar, ghost pepper (yum!), white sugar, garlic, soy sauce, a pinch of sesame seed oil and fresh cilantro. This will be a new staple in our home. :)

    Made this last night. My sauce didn’t thicken as much as in the video even though I did everything to the T. It was still delicious but quite liquidy. This sauce is great on anything...I’m thinking chicken nuggets! The tofu, I guess I fried for too long so it was quite dry. Will try again tonight.

    This will be good as salad dressing also. In indonesia we eat this peanut sauce with kind of tropical fruit like papaya, pineapple, green manggo (unripe) or any other fruit. We call that RUJAK but with more chilies 🔥🔥🔥
    Or leave the peanut aside, just the palm sugar, tamarind water, garlic and shallot, and chilies, seasoning with pich of salt & pepper. Blend all the ingredients in a mortar and then put in the tofu inside of the mortar then give a lil smash, not too much just to blend it all. We call it TAHU GEJROT, mean tofu crushed or something sound like that 😁. Give it a try pai. Love your kitchen ❤❤

    How long can I keep the sauce for? I’d like to make a batch of it. I would assume not to add the peanuts in until I’m ready to use it?

    Hi Palin, next time you make this try it with "medium firm" tofu. I use medium firm (Hinochi brand. Blue package), cuz it gives me crisp skin but juicier inside. I just put the whole loaf on top of a strainer in or out of cooler for a couple of hours, or even over night. Trust me!! This is the BEST way to remove water from tofu block. Paper towel only removes a very very TINY fraction of water, and ONLY from the surface. I even tried this with soft firm tofu, which I left overnight. It had great crispy outside but very hollow and JUICY inside... it was like a super crisp, yet juicy PUFF!! IT was awesome and worth the trouble

    Hi, I'm a huge fan! Thank you for doing what you do. Question: Where can I find spur chilies? It's common in many Thai dishes but they are not easy to come by in the States. Please recommend an equivalent.

      Korat Banchan You can do any other kinds of red, medium-to-mild chilies that you can find, or even red bell pepper would work.
