You can add potatoes to couacous but it is not as essential as the turnip. A couscous without turnip isn't itself lol. However, there are regional particularities to the dish.

That's not true. There's no such thing as only one traditional way of preparing couscous. The dish is prepared differently in different regions of the Kingdom. In the North, they include potatoes, and it's the traditional way.

I am from Al hoceima born and raised in the Netherlands en 80% of the Moroccans living in the Netherlands are from the Rif region or Northern parts of Morocco and when you go to a Moroccan restaurant here in the Netherlands and you get couscous it's never with potatos. 🤷♀️
traditionnaly moroccan couscous isnt served with potatoes, but some people will add some for children mainly because children usually only eat carots and potatoes at a very young age, the traditional vegetables are, tomato and onion for the sauce, carrot zucchini cabbage pumpkin and turnip, in the red meat ones you can find some chick peas and fava beans, and in chicken one you can find tfaya (caramalised onion and raison), that's how it's traditionnaly done, but every one has his own twist sometimes

Yeah I feel you, going out during Jomoaa time in Fridays in Morocco is generally usually boring as everything is closed for prayer and people are either at the mosque, preparing couscous / lunch, doing house chores or just chilling / sleeping, activities are overall put in a halt, so yeah..
