Water kefir is probably the easiest way to make homemade soda. All you need is some juice and kefir grains and in a couple days you can be drinking a delicious fermented soda!

Kefir and kombuka use completely different organisms to ferment. Water kefir and milk kefir also use different organisms even though you can make water kefir by using kefir milk whey. But organisms are different. But...variety is good.
Instead of juice can you use organic tea made with honey?

Oh God! This looks so much easier than the multi step process of kombucha. I'll try it. I could never stand the acidy taste of kombucha
You know that kombucha doesn’t have to taste acidic, right? You ferment it the very first batch with the Scoby for 7 to 12 days once you’ve done that you store your Scoby with about a cup of the tea then you add in juice, fruit or whatever you want or even just more sugar and once It’s carbonated to your taste, you can start drinking it right then. But the flavor is constantly changing. It’s really delicious. You do not have to have acidic kombucha at all.
I'm not sure what experience this channel has to be sharing this info very confidently. But from my knowledge and experience (plus the general kefir fermenting community). you ferment the kefir grains in water with sugar. THEN you take that water out and add juice to it. Don't add the kefir grains straight into the juice. High chance they'll die. 🤗 Just an fyi Incase you want to try it.

Is the resulting product sugar free?
I’m sure if you let it ferment and carbonate enough it would be more dry and extremely carbonated, and it would have the least amount of sugar. It might even be a little bit on the acidic side. I mean that’s just it carbonation comes from the bacteria and yeast eating the sugar.
@@salemrosales4259 the sugar doesn't just disappear. The sweetness decreases but the caloric value almost stays the same.

What does it taste like?
Any flavor you want it to taste like, you just add your favorite juice or fruit. by itself though its pretty plain, slightly funky i guess

fermented for 12 hours vague fermented taste and sweet 24 - 48 hours more stronger fermented taste, smooth and less sweet

That’s not kefir
Kombucha has a much more diverse yeast and bacteria range than Kefir. But Kefir is still awesome. There’s no need to oversell it.

They’re different and both good! Also, I don’t know why everyone’s acting like kombucha Has to be extremely sour when it doesn’t.
