Ingredients
- Cross cut beef short ribs (300g per person (ask your butcher, they should be able to cut them for you)
- 1 nashi pear
- 1 banana shallot
- 3 cloves garlic
- 2 tbsp rice wine vinegar
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 4 tbsp soy sauce
Method
1. Mix all the marinade ingredients together.
2. Marinate your ribs for 3-12 hours.
3. Grill over high heat.
4. Serve with rice, kimchi and anything else your heart desires really.
5. Enjoy! - Jak na to + styl

We make those crosscut flanken ribs with Korean kalbi marinade and serve them on nori or romaine lettuce boats with rice and topped with kimchi and green onions. And hot chilies of course.

I know Andy is a chef and he lives on the eastern side of the world so I might be saying the obvious but holy moly he pulls these off better than a good amount of natives I know - and that's coming from someone that has lived in Korea, Thailand, Malaysia, China and Singapore and visited Japan and Viet Nam

Fun fact: Soy sauce types and flavors vary from country to country. There is soy sauce used only for soup dishes and soy sauce used only for stir-fried dishes. So you have to get local ingredients to cook. It tastes more different than you think.
