Okay - so whiting, at least this is for me - you DON'T have to fry them. We cook them this way: whole fish minus head and innards (not fileted) - then make diagonal slices through the outerskin on both sides, drizzle with lemon, butter, garlic and if inclined, any herbs you like - and broast/bake on a rack until flaky. We will often put garlic slices in the skin cuts. Or filet with skin on - and do the same thing. You can still use as tacos - but also over rice and veggies or whatever. SO good.

Do you ever use squid when surf fishing? Had a guy recommend it highly when I was on Dauphin Island last week on my last day there.
