- This video will show you how to cook Beef Pares.
Here are the ingredients:
2 ½ lbs. Beef, cubed
1 piece Knorr Beef Cube
2 pieces star anise
¼ cup brown sugar
½ cup scallions, chopped
2 thumbs ginger, minced
6 tablespoons soy sauce
1 piece onion, chopped
5 cloves garlic, crushed
2 ½ cups water
3 tablespoons cooking oil
Salt and ground black pepper to taste

Hello po to everybody. I grew up in QC. As far as I remember, "Pares" originated in Jonas restaurant in Mayon St. QC. (feel free to correct if im wrong), then followed by "Rudys Pares" near Circle theatre, also in QC. (Pirated daw ang recipe. yun ang tsismis)
To make it short, the word "Pares" is,...the beef stew is "paired" with fried rice.
Now the quick history of "Pares"
Jonas restaurant is known for Mami and siopao combination as one of there specialty.
As for Pares, it started, basically from Mami.
The way they prepare their mami is, normally, bowl of noodle, beef stew sauce is poured and lastly yung beef broth.
They just separated yung beef stew use for mami, and the beef broth sa separate bowl. ( instead of mixing it with mami noodle)
And just "Paired" it with fried rice topped with fried garlic/onion. So the word "Pares" came, and as another item in there menu.
Coming from insider, it started one time they run out of mami noodles so they just used fried rice. (Although i doubted it)
So there you go. Pares is the beef stew paired with fried rice.

I remember hanging out with guys who buys and sell cars at retiro/mayon. I think your "pares history" is somehow accurate. We ate lunch, merienda, and after drinking dinner there at Jonas. If I remember correctly the owner/chef's name is Mang Panyong. Also, there are 2 types of pares when you order, pares-malaki or pares-maliit. That was in the late 80s.

True truth, late 80’s naktira din kami sa la loma q.c. (Speaker Perez St.) and very famous noon yong Jonas along Mayon St. malapit sa Retiro napakasarap ng pares nila malapot-lapot yong sauce at sobrang linamnam kaya dinarayo talaga ito, i remember pag kakain ka noon sa kanila swerte mo kung makakaupo ka agad sa dami ng gustong kumain hehe natatandaan ko din na along Retiro going Blumentritt may pares-san din na maliit lang ang pwesto Rudy’s ang pangalan ang sarap din ng pares nila doon halos kasing sarap at timpla ng Jonas. Di ko alam kung parehas to sa lasa ng mga binebenta ng mga naka bike or yung sa retiro. Yun kasi yung masarap talaga kesa sa mga binebenta sa malls.

Mas nakakatakam talaga yung tipong nasa tabi lang ng kalsada pagdating sa mga ganitong klaseng pagkain. Kahit gano kasi kaganda resto iba pa rin yung authentic.
Oo mas masaarap yong mga nag titinda sa tabi ng kalsada yong mga naka bike lang... Kumpara sa mga resto iba layo ng lasa di ka ganahan masyado...
Cinnamon ginagamit ng mga naka bisekleta instead of star anice. Trust me.

You can use cornstarch just to thicken the sauce and add brown sugar. Ang beef pares malapot yung sauce and sweet. Anyway looks yummy. 👍
