    Your video is the only one I have found in English that shows how to make decent galaktoboureko! I lived in Greece for years, so I know what the food is supposed to look like and I can tell you researched before posting unlike some other You Tubers who call their dish Greek and it's something I've never seen before...

    I am making it right now will post tomorrow Easter, if it is as good as Estia in Center City Philadelphia's. By the way, I used two sticks of melted butter, because she doesn't say how much butter to melt. It just made it, but i was very generous with it. It looks good in the oven!

    here is my recipe, i wrote it down from watching the video. Hope it helps someone!
    GALAKTOBOUREKO
    Take 5 cups milk in a pot & a
    Big orange peel and bring to simmer, add
    1 cup semolina stir till thick
    let cool a little
    Add to that pot SLOWLY (I took a ladle of hot semolina and stirred it in the egg mix a few times and then mixed it all and stirred it constantly).
    4 egg yolks and 2 eggs beaten with 3/4 cup of sugar
    Take 10 phyllo dough (my APPOLLO package had two pack each said 10 however, there were more like 20 in pack not 10 unless you count two for one sheet????? Not Greek? don't know.
    Anyway, melt two sticks of butter. Follow how she does it with the sheets. Save the last 3 sheets for the top, I saved four (actually 2 because the dough sheets kept sticking together)
    when all together, slice the top layer of of the dough only into slices (my 9 by 13 pan made 18 squares) use the rest of the butter and drizzle in between the cuts you just made. Sprinkle a little water all over the pie and bake at 350 degrees for an hour. I have a convection stove, and I still did the hour.
    Syrup:
    4 1/2 cups of water
    2 1/2 cups of sugar
    half a lemon
    cinnamon stick
    Bring all of the above to a boil, then let simmer ten minutes. shut off. When pie is done, stir into syrup 3 tablespoons of honey and pour all over the pie.
    Let cool, about 10 minutes and pour the syrup all over. let sit 4 hours or overnight.

    Dear Katerina Katerina and Patricia: As a single man and diabetic, I had a similar thought to make a batch individual ramekins for portion control. Could the ramekin be frozen before or after baking? Otherwise, I would consume mass quantities. Sadly, there are no local bakers. Thank you and great baking!

    Hello - i will be making this recipe this weekend, and i am liking how you fold over the phyllo so it looks very neat. What size baking dis do you use? I was planning on using my largest pyrex glass dish which is 9 X 13 or 11 X 15. I am looking to use the larger one for more pieces (11X15). advise when you get a chance. thanks

    • @christinapapoulias4706
      @christinapapoulias4706 Před 9 lety

      lol I know its late but you normally make this with a 9x13 pan. You can cut the phyllo in strip lengthwise (in half and then half again). Use two strips per pastry and use a tbsp or two of the filling then roll it up like a cigar or a triangle. make sure to butter all sides and add it to the pan. Makes more pieces that way. You can also do it like she does and then cut each piece in half like a triangle.

    Hi
    I'm hoping you could help me, I baked the GALOKTOBOUREKO followed Your instructions from watching CZcams IT WAS LOVELY ALTHOUGH in the end the Top CAME OUT SOGGY, USED THE CORRECT AMOUNT OF SYRUP USING THE RIGHT AMOUNT INGREDIENTS LET THE SYRUP COOL ROOM TEMPERATURE LET THE GALAKTOPOUREKO SIT FOR 10 MINUTES. I was thrilled it came out crispy although disappointed when the syrup was poured on it went soggy letting it sit for 5 hours.
    Please help and advise what I could do next time any Good tips would be appreciated My Cake tin measurements 13 X 9 Inches.
    Thanks

      +M PS Next time do those 2 things..first put into the syrup 2 tbsp of glucose syrup and second make sure that your syrup is cold and pur it the moment you will get the dessert out of the oven,you will here cracking sounds from the fyllo,its ok you're doing it right :)
      Also dont cover it with anything,covering while warm makes fyllo soggy!
      Hope you give it a try and let me know how it went...Good luck :)

    • @katerinamafiosa

      i would start at 20 minutes. that sounds like way more work. Remember, you'll also have to do that with the Phyllo dough and keeping it damp will be a challenge.

    • @deadrat7967

      Rufus Clark in this case it would just spoil it. this is a traditional desert with a balanced taste. cheese doesn't fit here. I like twists in general but that's just not right for this recipe. You could make other twists like for instance add cinnamon in cream or lime in the syrup. cheese is just so wrong in this case
