►Ingredients for the Lemon Pepper Wings
►Chicken Brining
1.3kg or 2.8lbs chicken wings
3 tbsp lemon juice
2 tsp salt
2 tsp cayenne pepper
►For the Lemon Pepper Seasoning
7 - 8 large Lemons
1 Orange
2 tbsp black pepper
1 tbsp garlic
2 tsp onion
1.5 tsp citric acid
2.5 tbsp salt
►For the Dredge
2 cups (240g) plain flour
2 tbsp lemon pepper seasoning
1 tbsp garlic
2 tsp onion
1.5 tbsp cayenne pepper (optional)
2 tsp salt
2 tsp MSG (optional)
2 tbsp thyme (optional)
Water in a large bowl
►For Frying
1 litre oil
►For the Lemon Pepper Butter Sauce
3 tbsp water
1/4 cup lemon juice
225g butter
2 - 3 tbsp lemon pepper seasoning
1 tsp garlic and onion
2 tsp sugar
Salt to taste
2 tsp parsley
Some lemon zest
►For the Chili Buttermilk Sauce
1/2 cup (150ml) buttermilk
1/2 cup (150ml) garlic mayonnaise (recipe on the channel)
1/4 cup (60ml) pickle juice
1/2 cup (120ml) hot chili sauce
1 tbsp wholegrain mustard
1 tsp cayenne pepper
1 tsp black pepper
2 tsp salt
Handful parsley
