I’ve been waiting for the Philippines 🥺 this brings me back so much nostalgia, every night after “simbang gabi” with my mum, we’d always stop by outside the church to buy Bibingka and Pluto bungbong freshly made from the vendors, then we’d take it home and share with my cousins 😭every night felt like a feast even to the food was simple. I miss being at Home 🫂

glad to see you chose bibingka, it's a very comforting food. it's perfect with tea/coffee and i definitely associate it with Christmas, you'd normally buy this outside and they (local shops in your neighbourhood) usually only sell this on Ber months bc that's when we usually start prepping for Christmas. another very Christmas-y dish is puto bumbong but in my opinion that's like 3x more difficult than this lol so definitely a wise choice also very happy to see you prep the banana leaves the right way!!

I figured you were going to do bibingka! You’re just 2 days* early from the start of simbang gabi/ misa de gallo, where catholics hear mass in the early mornings of dec 16- dec 24. Bibingka and puto bumbong are usually sold after the mass and it’s a such a warm treat to have going out into the chilly air 🥰 EDIT: I first said a day early cause it’s dec 15 here but realized this was day 14 for him 😅✌️
Filipinos are Catholic and around this time of the year, there are what we call “simbang gabi” (masses at night) where you go to church at night. You’d see a lot of food vendors selling bibingka and all kinds of goodies outside of these churches. I miss the smells!

one of my favorite Filipino restaurant makes Bibingka with EDAM cheese, UGH so good. Filipino Christmases are not complete without "queso de bola" which is basically edam cheese, but a waxier and saltier version. this was a result of colonial era trading when Spanish colonizers only had access to Dutch edam cheese in Southeast Asia and it became a staple in Filipino Christmas tables. Try it with edam cheese!
Best to eat bibingka fresh from the oven. Usually you eat it after attending "simbang gabi" or evening mass/early morning mass (4-4:30am). So, the ambience is cold and serene and laid back and having a warm snack/meal with a hot chocolate or coffee on the side while having a chat with your family. Perfect!!!
South Carolinian here. Candied pecans from my mother, homemade apple cider cookies from me, the world's best chex-mix from grandma, ham, cranberry sauce, mashed potatoes extra creamy, and of course the tradition of making fresh ginger bread cookies on Christmas eve, then staying up until 4:00 in the morning because even the adults are too exited for Christmas to sleep
This is even better when cooked in a traditional way like in charcoal and placed in a clay pot with banana leaves. Also when we eat it in the Philippines, it comes with shredded coconut. Soooo yummy😍🥰

Bibingka actually has a lot of variation, my family usually cook it with shredded coconut with butter and sugar melted on top.
