  • Kutsinta or Puto cuchinta is a type of steamed cake found throughout the Philippines. Made from a mixture of cassava flour, brown sugar and lye, enhanced with annatto extract.

    INGREDIENTS:
    1 cup cassava flour
    1 cup all-purpose flour
    3/4 cup brown sugar
    3 cups water
    1 1/2 tbsp. annatto seeds (atsuete)
    1/4 cup hot water
    1 tbsp. lye water
    Cheese (or grated coconut)
    INSTRUCTIONS
    1. Mix annatto seeds(serve as a food color) and hot water, drain and set aside.
    2. Lightly grease a 9x9x2 inch baking pan, keep aside.
    3. In a bowl, combine cassava flour, all-purpose flour, sugar, and water.
    4. Dissolve the mixture until smooth, then add atsuete and stir until well dispersed.
    5. Add lye water, stir to combine.
    6. Pour the mixture in a greased pan, remove bubbles then cover with foil.
    7. Steam for about 30 to 35 minutes or until mixture is set.
    8. Remove from heat and allow to cool before removing from pan.
    9. Slice then serve with cheese or grated coconut
