I think the food airlines try to give us is always good but the high altitudes, reheating and all that really take away from the food. I'm sure the meals you had are going to taste different up there after reheating and what not.

Love the suggestion about the buffet flight! They could call it the foodie flight and serve it over 5 or 6 hours like an Italian dinner with multiple courses!
Next video would be great to see how they get the stuff ready to serve in flight. Since usually what I have had in economy is just a warmed up tray. Blach

your steak with peppercorns goes by the name of steak au poivre, the sauce is made with the drippings from sauteing the peppercorn encrusted filet mignon then degazing the drippings with a brandy, flame it, then a little bit of heavy cream ...reduce and pour onto a plate then place the meat in the center and enjoy

paulson thomas airplane food is considered one of the unhealthiest. Those enhancements are salts n sugars. So u can actually taste it up there. It's crazy but, it's true :)
Roshill K yeah, youre right. the airplane has to be pressurized at less pressure than what we are used to on the ground to reduce stress on the airframe in the air and because of that our senses become less sensitive and we taste/smell food as more bland than it actually is, so airlines enhance the flavours more to balance it out. but its extremely unhealthy

While I did enjoying looking up how altitude effects taste, I don't see how adding slightly more salt or sugar would make food extremely unhealthy.
That was pretty good! I have never flown Singapore Airlines, but I've flown in many other airlines internationally. I guess the best for me was Cathay Pacific on their LAX-HKG flight & back(done the night, and daytime flights both ways), and Asiana flight for the SFO-SEL/LAX-ICN served really good food. I got to hand it to Cathay for their economy flight food being top notch. The Singapore Airlines food seems to be pretty good too. The buffet idea is nice if you paid a bit more, I wouldn't mind it. I did ask for seconds on the HKG-LAX flight & they acomodated me without delay, and flight attendants were nice. The Asiana flight attendants were nice as well... one even joked with me, and helped me with the menu. She said... There is "Rice & everything nice" amongst other things, and the attention of detail/service went a long way. That makes up for the whole check in. In Korea they even give people slippers to pass security when taking off your shoes! The details like that make a lot of difference when flying long leg flights.

Great video Mike. I think you should have asked them how they ensured heating up those food in an aircraft will not alter the taste too much. More so if it is beef or lamb that are already cooked medium rare.
Rex Chan They have an airplane oven inside the kitchen to test as much as they can. Unfortunately the only thing they’re missing is cabin pressure.
I have a lot of respect for you -- you never seem shy or the least bit ashamed to express your feelings and honest opinions! I'd be way too awkward to applaud a chef in public no matter how good a dish is, heh.. Thank you for all the videos you make! I like to live vicariously through them, 'experiencing' such a huge variety of food without having to actually travel anywhere (although it gets pretty torturous sometimes). Your passion for what you do passes over so well. c:

I worked in the Food Service department for Continental airlines for seventeen years. I had the opportunity to travel the world and be present at many food presentations like this. I will day I have my favorite airline caterer with Flying Foods be a close second. They always did a grand job Continental.

Singapore Airlines always serves delicious food. I travel in economy class and their food is among the best I have had in a flight.
