    Keep them in a dark place they'll open faster, they usually open once buried in the dark under the sand

    Chef merci beocuop. Tonight i had to purge clams and my mom said not to put them in the fridge but i did so and they were so closed up that no.sand came out of the shells and i had to rinse everything once cooked.

    I use tap water and cornmeal, only enough kosher salt til taste in water, put ice in, towel on top, 6 hours. Worked for years.. I do bring in buckets with salt water first 3-6 hours, brush shell and ready for dinner any way. Freeze cohaugs shucked with liquor for stuffies or chowder, many uses for littlenecks, cherrystones too even freeze meat with liquor for clamcakes.. steamer clams we steam and dip in butter, rest steamers put in pan covered with damp towel and fried clams with bellies next day, 💕 them..

    My family always used cornmeal. They’d put them in a big bucket of sea water with cornmeal in the bottom.

    If you have access to ocean water, get a bucket of that and let them sit in that overnight in the fridge. Best at home method there is. Anything else will remove that fresh dug from the ocean taste.

    You have to use sea salt. Iodized salt will kill the clams.

      @@joanc120 yes but if the salt killed the clam (and it will) before it expelled its sand and contaminants then all you have accomplished is serving your guests a half sandy clam that has already started to rot on your counter for 2 hours.

    If the clam does not open, is that mean it’s a bad clam so throw it out from the batch? Or can I force it with a fork and put it back in the cornmeal water? Please let me know as some of the claims don’t open.

      Before boiling! If the clam is light, easily separate it by fingers, the clam is dead. For open-mouthed clams, if they close their mouth by touching, it proves that it is alive and delicious. So yes you can force it to open then enjoy!

      From what I’ve read, they will eat the cornmeal and, because there is only so much space in their stomachs, it will expel the sand to make room for the cornmeal.

      The flavour is in the meat, the juices is just the ocean water, when u purge them in saltwater u won't tell the difference

      mp allagnat i read since they are naturally salty, purging is recommended, but all in all, i guess it depends on the person eating, and who is seasoning the dish.

    Spare cornmeal. Salt works or chili or pepper. Try for yourself. Buy clams. Divide them into three groups, approximately equal by the number of clams. Put salt in one bowl, corn meal in second and nothing in the third. Put clams in and after two hours check. Where there is salt, there will be the most sand. The amount of sand in the corn water and plain water will be almost the same. So cornmeal advice of this chef is total bollocks and I bet connoisseurs are laughing out loud at him.
