Keep them in a dark place they'll open faster, they usually open once buried in the dark under the sand
It works! Thanks chef.
Thank you chef!
So smart.....handy tip. Thanks so much.
Ik this is weird but instant oatmeal also works very well
Chef merci beocuop. Tonight i had to purge clams and my mom said not to put them in the fridge but i did so and they were so closed up that no.sand came out of the shells and i had to rinse everything once cooked.
Btw I finally found a great video on how to clean clams. Thank you thank you 🙏 ☺️
It works very well.
I use tap water and cornmeal, only enough kosher salt til taste in water, put ice in, towel on top, 6 hours. Worked for years.. I do bring in buckets with salt water first 3-6 hours, brush shell and ready for dinner any way. Freeze cohaugs shucked with liquor for stuffies or chowder, many uses for littlenecks, cherrystones too even freeze meat with liquor for clamcakes.. steamer clams we steam and dip in butter, rest steamers put in pan covered with damp towel and fried clams with bellies next day, 💕 them..
My family always used cornmeal. They’d put them in a big bucket of sea water with cornmeal in the bottom.
will it work for cockles ?
whats is the science behind this ?
what's a good sub for cornmeal?
If you have access to ocean water, get a bucket of that and let them sit in that overnight in the fridge. Best at home method there is. Anything else will remove that fresh dug from the ocean taste.
Thanks. 🙏
how do you purge freshwater shellfish?
You have to use sea salt. Iodized salt will kill the clams.
they are to be eaten anyways
@@joanc120 yes but if the salt killed the clam (and it will) before it expelled its sand and contaminants then all you have accomplished is serving your guests a half sandy clam that has already started to rot on your counter for 2 hours.
Thanks : )
Oh shit, well I went wrong step one then. Thanks for the heads up.
Imagine having a nickname that is basically the method for which you will be tortured and cooked alive by giants? I'm referring to "steamers" of course.
When any type of shellfish hear ‘bonjour’ they shut as tight as a clam!
If the clam does not open, is that mean it’s a bad clam so throw it out from the batch? Or can I force it with a fork and put it back in the cornmeal water? Please let me know as some of the claims don’t open.
Before boiling! If the clam is light, easily separate it by fingers, the clam is dead. For open-mouthed clams, if they close their mouth by touching, it proves that it is alive and delicious. So yes you can force it to open then enjoy!
@@watchwhat3790 thank you so much for responding. You have the best answer to purging the clams. You’re awesome👍👍👍
What about scallops please help
Oats work just as well.
Does this work for scallops as well?
Yes.
@cookingguide does this work with mussels too?
Becca a yes works for all clams mussels quahogs
Yes I just watched a video 👍🏻
Why cornmeal? What does it do?
At least someone answered before Christmas dinner lol
From what I’ve read, they will eat the cornmeal and, because there is only so much space in their stomachs, it will expel the sand to make room for the cornmeal.
Plus the cornmeal cooks better. Than sand ,
A cook on a show with wristwatch and bracelets.... the first thing they tell to apprentices.
Wouldn’t they also purge their flavorful juices also?
The flavour is in the meat, the juices is just the ocean water, when u purge them in saltwater u won't tell the difference
desanding clams
Some say if you purge the clams or mussels they will lose their see water as a result they loose their taste
mp allagnat i read since they are naturally salty, purging is recommended, but all in all, i guess it depends on the person eating, and who is seasoning the dish.
mp allagnat add sea salt along w cornmeal
Salt, cold water, and what other ingredient please
corn meal
2 hour purge
Does this work for oysters?
No OISTERS BLOCK SAND AND YOU GET A PIRL😃
Oysters don’t hold sand.
You're wrong.I'm call you know what works is milk
Spare cornmeal. Salt works or chili or pepper. Try for yourself. Buy clams. Divide them into three groups, approximately equal by the number of clams. Put salt in one bowl, corn meal in second and nothing in the third. Put clams in and after two hours check. Where there is salt, there will be the most sand. The amount of sand in the corn water and plain water will be almost the same. So cornmeal advice of this chef is total bollocks and I bet connoisseurs are laughing out loud at him.
