Japanese Spicy Citrus Condiment, not Wasabi? | Yuzu Kosho Story ★ ONLY in JAPAN

- This Japanese condiment, spicy-salty citrus is still unknown to many will change the way you enjoy your food forever. Yuzukosho (柚子胡椒) is by far my favorite Japanese condiment or seasoning, better than wasabi and Japanese mayonnaise. It's found in Kochi prefecture on Shikoku Island and I traveled there to see it farmed and made at the factory.
Yuzu Kosho is a simple recipe of fermented Yuzu rinds, salt, green chili peppers without seeds and Yuzu juice added to taste and consistency. The salt content also helps preserve it longer.
▶︎ What foods does Yuzu Kosho go well with?
Yakitori, wagyu beef steaks, nabemono, soups, pasta, karaage deep-fried chicken, salad dressing, pizza, hot dogs ... it's very versatile.

I dunno why but this channel should have 5 million subscribers by now. It's child friendly. It has great and truthful content. The editing is television standard. The host is literally living it. No fake passions.
He just restarted, his previous channel had almost 1.5 mln subs.
@@BLY99 May I ask why he restarted? He is such a passionate CZcamsr and the videos are very good too. It's on par with a lot of documentaries from TV, like NHK or the BBC.
@@SuperKendoman Apparently the channel was owned by somebody else even though John built it up. And there seemed to have been a dispute about it, so John left. And the other guy tries to carry it on with different hosts and it's not going well.
I know. I was a subscriber. I really enjoy his work.
@@linkcullum9961 thanks Link!
"Its so sour!" Then promptly takes a 2nd bite lol
I had to make sure .... yeah, it’s SOUR!! 😆
That Google earth - drone transition was money! Great vid, love yuzu - made sorbet with my yuzu this year.
Google Earth engine is noice
Thanks Jaya! See you soon ^_^
Great idea I would love the recipe
I love your only in Japan episodes so much. Please keep making more. I don't mind the on-the-go ones but I just love these ones better.
2:08 Jaya, yes!!! Star Wars-style scene transition to that wide panoramic vista, followed by that epic music… evocative of Lawrence of Arabia… dude, it’s absolute perfection! 😙🤌🏻 I’m nominating John for a Tubie. 🏆🥇
I’ve been to a lot of food filling and bottling plants and it’s always nice to see small places like this making small batch products and are successful at it
The way you produced this one is like a "How it's made!" video, but even better because you add your personal touch and perspective. I loved learning about the entire process. I really need to try Yuzukosho the next time I visit because somehow I haven't yet!
U
1:36 Dang John, usually I have to pay extra for THOSE videos!
Something else I appreciate is that Japanese people aren't dubbed. I like to hear their original voices and get annoyed when other videos just cover over their voice completely!
uP
Love yuzu! That lemon/lime flavor with the after taste of mandarin orange. It makes the best marmalade.
As an Englishman I'm now very jealous, looking at my raspberry jam on toast (breakfast) and so longing to try your suggestion instead
"It has the scent very characteristic of Japan."
So true!
Luckily I can get it here in Oslo. And the taste brings me back to Japan every time. It's probably my favorite condiment too.
Another great episode John! Wow, I miss Japan now!
Can you describe it's smell to someone who does not have access to it?
When I discovered spicy red/aka yuzu kosho it was a game changer. Now it’s one of my favourite condiments, can be used on almost everything!
15 008 views, 2429 likes? Are you kidding me? Come on, guys, John's content is truly unique and amazing, don't be shy, click the like button! Or click the dislike instead - but give him the feedback, why you dislike the video.
Never disappointing with your documentaries! Well done!
Japan needs to export this on a big scale. According to Angela of Internationally Me, she has said many yuzu fruits are left unpicked on the trees because farmers are getting older and can’t pick them fast enough.
Urbanization is quite a problem in Japan (also in many country) so many young gen left rural to live in big city.. no one want to be farmer
nonsense , the japs are selling fruits at ridiculous price which yuzu originated from china
WIll look for Yuzukosho next time I get to my asia store.
I live in Tokyo but some of my family members live in Kochi so I’m happy to see it is featured😆✨It has great nature and perfect weather for growing veges and fruits😊
Interesting that the color of yuzukosho is not from Yuzu but green pepper! Thank you for interesting presentation ❤️
Absolutely love Kochi and can’t wait to go back, esp get some drinks at Hiromi Market when the pandemic is over! ^_^
@@onlyinjapan Sounds great☺️✨Bonito tataki (just grilled with straw)with some salt goes well with drinks there💕Can't wait to visit there again too!
I used to live in Hyogo, just across the water from Shikoku, so I know that Shikoku's Yuzu are AMAZING. My favourite ポン酢 is 馬路村。It's super hard to get here in Canada, though.
Love the video there was a lot of yuzu-ful tips on what to eat it with xD
Love what you've done with the new channel!! Extremely excited about the content and presentation. We love your work, John!!
When you work hard and really care about what your doing, this is the kind of video you get, great work sir🇯🇵👍

Yet again, you’ve outdone yourself with these amazing videos John! Extraordinary job, love all your videos and only in Japan go.
I love this stuff! Thank you for this episode!
Impressed with the whole hand preparation process of Yuzukosho (some serious food safety apparel there). My husband and I always enjoy your OiJ JD episodes as well as your streaming videos. Thanks so much for all your interesting and fun content!
Every time you upload a video, I get to add something to my pool of "Japan Knowledge", and I love it! The beautiful and scenic landscapes are pretty good bonus too.😁
Looking forward to more episodes and live streams. Cheers from India!
Great video! Loved learning about an amazing Japanese condiment! Very cool!
Loved it ... Thank you for delivering quality contents again!

dear John, thank you for your hard work to educate us the uniqueness of Japan! has been a follower since you only have 5 videos on the other channel. Your documentaries really on another level. Thank You!!

Respect for small batch producers, and also my fave condiment! Thank you for bringing us behind the scenes as always 👍🏼✨
John, Yuzu Crazy! 😉 🤣 🤣 🤣
Hahaha! Yeah, Yuzu don't know how far I went to make this one!
I found some yuzukosho on Amazon from Tokushima , I'm going to order some and try it.
It looks so delicious! I’ve never tried it. I love how the factory takes care with their product. Such a neat process. The mayo scene is the best!
I appreciate the time and energy that it took to provide this informative vid! I've never heard of yuzu kosho and now I cant wait to get my hands on some. I've got Yuzu honey... now to go the other direction!
Did this motivate anyone else to just get up and go? Such great energy and well done. Today's mission is to pick me up some Yuzukoshõ 😉 Mahalo John 🤙
Again great and very informative episode!
Indeed, just the content I am here for. Thanks John.
Great video as always! Love your content!
Yummy! Thanks for the details around getting Yuzu in my belly!
Oh... I want to eat Yuzu Kosho on an English muffin with an egg
Constantly expanding my beltline with delicious episodes. Keep it up buddy.

I found YUZU Hot Sauce in my local Trader Joe’s

Keep doing what you love, and we'll keep loving what you do!
I'm so happy to see John getting more subscribers and views!! His channel is the best!!
Sounds exciting! I just came from your livestream a moment ago :)
Something something Yuzu
😋 Yum! Another great video!
I love watching you videos. I get excited when I get a notification that a new one is up. They are always interesting and informative.
Somehow this still isn’t in my subscription feed. I had to search for it using the actual search function!
Now it’s up
Subscribe, click the bell and set to "all notifications". It helps if you like the videos as well, seems to give faster notifications if you always like the videos.
Yuzu is good on everything!!
Wow what an informative video. I've never thought about what's actually inside Yuzu Kosho. I'd love to see more videos on unique condiments in Japan and how they are made. Keep up the great work John.
Had YUZU this morning......best way to start your day!
I want some Yuzu Koshio! How do I get it in SG?
Heh get one near esplanade, there's a large Japanese supermarket.
I absolutely love the produced content on the channel. I look forward to many years of content ❤️
Really great episode! Loved the the timeline of this one. Really informed me on what Yuzukosho is! Going to keep an eye out for it on my next trip to our Japanese Supermarket!
This was very interesting to watch!! I really wanna try it when I visit Japan
Thank you for sharing this with all of us John.
what’s the annual Yuzu harvest per ton?
This is amazing, one of the best feature episodes I’ve seen. John, you deserve atleast a million subs if not more
Thank you for the info John.. I’ll definitely try this condiment.
Never tried Yuzu before, but it seems really good
1:35 Seriously John? LOL!
I was thinking the same thing when I saw him make that "O" face, haha.
Compared to how much of the video was left, that clip was premature.
He’s a man of culture
Love your content as always John!keep it up!
Now more than ever we need taste-o vision!
I agree
I love your videos John watch them over and over, this Yuzu sounds yummy
It's because of your love of yuzu kosho that convinced me to try this for the first time. And now I'm a fan of the condiment too.
Really liked this episode! Truly informative of the whole process from farm to table and well resumed.
Thank you John!
Afonso Cruz
Omg I love Yuzu!!!! ❤️ ❤️ ❤️ Next time I'm in Japan I will have to try this!!! Wishing you lots of success on this channel!
I definitely need to try this out! Thanks John for telling us about your favourite condiment 😋
You’re welcome Joanne!
the production of this documentary is so clean
Ive seen nearly all of your videos John, on the old channel and new. I gotta say this is one of your best, I think youve become a true master at this point. Your editing, shots, and how comfortable you seem, all combine to make some of the best content out there. Keep it up!!
Gotta go pick up a bottle at Tokyo Central now (Doki).
I'm going there this Sunday too. Hope I can find it.
I've always thought that it was green because of the Yuzu zest, but boy I was wrong! I've always had yuzukosho with gyoza in ramen restaurants. I'll add that Kochi store in Tokyo to my must visit places in the city in my next trip (whenever that might be...)
Can't get enough of this channel! Incredible informative and fun to watch :) Thank you!
This was a great video c:
Love yuzu kosho. The smell in the factory must be amazing. Looks so vivid before it got pasteurized.
That was a cool video and now I´m hungry. Dangit, John!
Love the inside factory shots.
Another great video, thanks for the content!
It looks so yummy
So interesting, I’ve never heard of this product before! ✨
Oh, you definitely have to try it! I buy a jar once a month.
Awesome content as always John!
I've gotta try Yuzukoshu! Looks great!
I love Yuzu! I'm trying to find a tree to grow here in California. Due to agricultural laws, they are difficult to find.
Don't forget steel boots and armored gloves 😜
Glad you're back
Thank you! for sharing Yuzu Processing Factory. Looking forward trying some Yuzu 😋👍
If only could get to try some of that, can’t try now because of the you know what...
Great content, hope to visit Japan again once everything is safe and normal.
What's Japan like?
