Lobster Pie, The Best Lobster Pie. New England Lobster

- There are several other ways to enjoy Lobster other than steamed or boiled and in this video I bring to you another New England favorite....Lobster Pie
Ingredients
Meat of 2 large lobsters inluding the tomale
Reserve 1 cup of lobster broth from cooking your lobster
5 sprigs of fresh thyme
3 cloves of garlic minced
10 tbsp butter divided
1.25 cups of half and half cream
1/4 cup sherry
1 sleave of ritz crackers or gluten free cracker see link below
4 egg yolks
Juice of half a lemon
shredded parmesean cheese for topping

I really like the idea of thickening the sauce with egg yolks. It adds additional richness. (as if the dish wasn't rich enough, lol) Anyway, I've been a chef for 40 years, specializing in Italian. I've never been to Maine, and never heard of lobster pie, until now. I'll be making this.

Thanks Chef,,,you will have to share some of your Italian recipes. Thanks for subscribing. The beauty of this recipe is that you could easily substitute the lobster with say...Shrimp, Jumbo Lump Crab, Scallops...etc.

Is that Cream Sherry? I use that when cooking fish and chicken. Love the flavor it adds.
It is and many say not to use cream sherry but to be honest I've always had great results.
@@mikethestewburner5505 Thanks for getting back to me so quickly. Thought it was saw the Harvey's label. I've heard the same seems Dry Sherry is what most recommend, but for me Cream Sherry is a must add when cooking fish and even chicken.
@@geru2000 I have one simple rule when I cook...do what works and tastes good to you and those that enjoy what you prepare. Justin...had a great saying about what color wine to drink when eating fish, chicken or beef...."If the Chicken knows what color wine you be drinking, the you didnt cook him right in the first place" lol

I followed the recipe exact. When I added the lemon I noticed the sauce curdled a little bit. Didn't give it too much thought since I followed the recipe, but this was the biggest waste of $48 worth of lobster ever. Super disappointed.
Not quite sure what you did wrong but as you can see I hade quite different results.
