Cheesecake recipe:
Ingredients:
1 packet of scotch finger biscuits
125g of butter
250g of Cream cheese
1 can of condensed milk
1 teaspoon of vanilla extract
1/2 cup of lemon juice
toppings of your choice (I did berries, malteasers and crushed flake, but passionfruit is also really good!)
Method
Base:
1. Preheat oven to 160 degrees
2. Melt butter & crush biscuits in blender to make a crumb consistency
3. Mix butter and biscuits
4. Press into buttered cheesecake pan (I usually use a flat bottomed glass to press it down)
5. Put in oven for 10 minutes or so until crispy (I overcooked mine a little oops)
6. Allow to cool
Filling:
1. Cut cream cheese into smaller pieces (it's best if you work with room temp cream cheese - it's easier to mix)
2. beat cream cheese with an electric beater for a few minutes
3. slowly add condensed milk as you are beating cream cheese
4. add vanilla & lemon juice
5. Mix until combined
6. Add filling into the cooled crumb base
7. Refrigerate overnight or for several hours
I usually try and add the toppings right before serving :)

Theme nights are great for dinner parties, incl ones where guests can assemble stuff themselves. I've done 'make your own pizza' nights, Mexican where all the ingredients are done and you can make your own tacos, burritos, etc. If you love baking, dessert nights are great too!
