Hajj Biscuit (Mahmool)
معمول حج حجازي
Ingredients:
1/C white flour
½C brown flour
¼C ghee oil
¼C cooking oil
½C milk
1tsp mahmool spice
¼tsp baking powder
2tbs frosting sugar
Dates Ingredients:
500g minced dates
1tbsp ghee oil
1tbsp roasted sesame seeds
¼ tsp cardamom powder
Mix all make into small balls, cover.
Mahmool Spices:
Blend 1tbsp fennel, black seeds, anise, prunus mahlab, roasted sesame, & carum seeds.
After blending, add 1tsp fennel & black seeds.

١/ك دقيق أبيض
١/٢ك دقيق بر
١/٤ك سمن
١/٤ك زيت طبخ
١/٢ك حليب
١م/ص بهار معمول
١/٤ م/ص بكينج باودر
٢م/ك سكر مطحون
وصفة التمر:
٥٠٠ /ق تمر
١م/ص سمن
١م/ص سمسم محمص
١/٤ م/ص هيل مطحون
يخلط جميع مكونات، يكور احجام صغيرة، وتغطي.
بهار المعمول :
١م/ص بذور شمر، حبة سوداء، يانسون، محلب، سمسم محمص، كراوية
بعد الطحن، إضافة ١م/ص شمر وحبة سوداء.
Recipe :
1. Mix flour, baking soda, & mahmool spice, pour hot ghee, mix, add milk till combined, don’t over knead, let rest 15 minutes.
2. Make dough to balls, flatten, add date ball inside & cover. Decorate with tweezers.
Note, date ball should be smaller than dough ball.
3. Place pan in preheated oven 200c bottom rack 15 min max for golden bottom, Place pan in top rack & oven top heat for 3 minutes.
4. Once cooled sprinkle with frosting.
طريقة:
١. يخلط الدقيق، بكن بودر، بهار معمول، يضاف سمن ساخن، يخلط، يضاف حليب حتى يجتمع، العجن خفيف، يرتاح ١٥ دقيقة.
٢. يتكور العجين، تتسطح، إضافة كرة التمر داخل وتتكور، تزيين بي ملقط.
ملحظه، يجب أن تكون كرة التمر أصغر من كرة العجين.
٣. ضع في فرن مسخن مسبقاً درجة حرارة ٢٠٠س الرف السفلي ١٥ دقيقة كحد أقصى لحصول قاع ذهبي، يضع المعمل في رف علوي لمدة ٣ دقائق.
٤. تبرد ثمة ترش بسكر.

Although I really like your recipes. I must say that this one has a lot of mistakes. First, you never add the butter and oils hot to the flour, it will bake the flour and make a tough and dense cookie or cake. If you want the flour to absorb the oils faster, you could add them warm, never hot. However, on the contrary, it is preferable to add butter cold, mix it in a food processor would be even better. Second, it looks like you over mixed the dough 2:18 because it's stretchy and when you press it, it comes back to their shape. To avoid this you need to add all the liquid in one step if you are working by hand, just to incorporate and then stop mixing. Third thing, you need to put it to rest in the fridge so that the gluten doesn't develop and it helps them to be soft and crumbly, and not hard.
