    SAUDI SPICES RECIPE:
    Ingredients:
    1 CUP FLOUR
    1/2TBSP CORN STARCH
    1/2TBSP YEAST
    1/4TSP SALT
    1 CUP SUGAR
    1 LIME
    Dough Recipe:
    1) Add flour, corn starch, yeast, 1tsp sugar syrup, and salt in a mixing bowl.
    2) Add a little bit less than 1/2 cup water. Add little by little till you get a gooey slimy consistency.
    3) Cover with plastic bag and let it rest for max 1 hour.
    Syrup Recipe:
    1) On medium high heat add half cup of water, 1 cup sugar and 1 lime.
    2) Cut the lime and add it to the syrup.
    3) Cook for 5-10 minutes.
    4) Cool the syrup in the fridge.
    Frying Process:
    1) Heat oil on medium high heat.
    2) After 1 hour, mix the dough well and remove all the bubble. Make sure u remove the bubbles to avoid the lugimat from exploding.
    3) Scoop all the dough in a plastic bag and cut a small opening in the bag.
    4) Dip finger in cold oil. Heat oil, start squeezing dough out of the bag and use finger to separate them and into the oil.
    5) Make as many balls as possible and once it started browning from the bottom, start turning them.
    6) Once all brown, remove and dip it in the cold syrup from 10-60 minutes. Don't over soak in syrup to avoid Lugimat from getting soft.
    7) Remove from the syrup mix, and serve on a plate.
    8) Eaten hot or cold.

    luqimat is originally from Sultanate of Oman 🇴🇲.
    It is also eaten in Ramadhan in East Africa in Kenya 🇰🇪, Tanzania & Zanzibar 🇹🇿 also Yemen 🇾🇪.
    I don't know if you know Bahamri it is made from flour it's pyramid shape???

    Always a joy watching your videos! In the Mediterranean we have a similar version, just with a different syrup (a combination of water, honey, lemon and cinnamon).

    رمضان موبرك!!! I definitely have to try dispensing the dough through a bag. Every time I try to do it with my hand they come out in very interesting shapes. I have to do half of the batch before they start looking right

    Salam, loved the video. Is the water used to make the dough hot or cold? Also, was the yeast mixed in water before you added it? If yes, mix yeast in hot or cold water?     Btw in the states we call the small green ones limes, and the big yellow ones lemons. The key limes are most like the Arab 'lymon'

    Eman you are simply delightful but even more important you are a wonderful educator! I thank you for this recipe especially this one. Since my family and I left Saudi (about 7 years ago) we have all missed lugimat at Fatoor. It is a dish that I relied on my beautiful sister in law to make, because she set the bar so high I figured 'why even try'. Now, it's been 7 years and we make a lot of our beloved Ramadan dishes but I knew it was time to try. I set out with this mission....to find a recipe that was clear and detailed techniques, turned out plus tasted like home at my in laws house during Ramadan. So, I found three recipes and prepared them all last night in my make shift kitchen....Alhamdallah! Your recipe was hands down the best. My family was so impressed with finally having lugimat for Fatoor because, it reminded them of their childhoods.

    MashAllah sis, this is a lovely recipe, I made it once last year, they came out amazing, the only thing I did differently was, I just drizzled the syrup a little bit over the fried balls bcz I don't like much sweet but wallah what a yummy recipe!
