Soft & fluffy Chiffon Cupcakes. Make this with only 3 Eggs | 松软纸杯蛋糕 (US Cup & Metric Measurements)

  • US cup measurement is updated below! ⤵️Today, we are going to make a simple snack with only 3 eggs! Soft and fluffy cupcakes for everyone at home! Your kids won't want to buy store-baked cupcakes any more!
    Ingredients for 12 cupcakes (Metric Measurement):
    • 38g Vegetable oil
    • 55g Milk
    • 3 Eggs (Separated)
    • 68g Cake Flour
    • 10g Corn starch
    • 40g Sugar (Not so sweet recipe)
    • 1.25g cream of tartar OR lemon juice OR white vinegar OR apple cider vinegar
    Ingredients for 12 cupcakes (US Cup Measurement):
    • 1/8 cup + 2 tsp Vegetable oil
    • 1/4 cup Milk
    • 3 Eggs (Separated)
    • 1/2 cup Cake Flour
    • 1 tbsp + 1/8 tsp Corn starch
    • 1/4 cup Sugar (Not so sweet recipe)
    • 1/4 tsp cream of tartar OR lemon juice OR white vinegar OR apple cider vinegar
    Method:
    1.In a large bowl, add and veg oil, milk and egg yolks.
    2.Sift in cake flour and corn starch. Stir to combine and set aside.
    3.In another large bowl, add lemon juice into egg whites. (This is to stablized our meringue)
    4.With a hand mixer, on low speed, beat egg white until foamy.
    5.Add sugar in 3 batches and continue to beat until stiff peaks form.
    6.Fold meringue into batter, 1/3 meringue at a time.
    7.Transfer batter into muffin tin lined with muffin cup.
    8.Bake in preheated oven.
    ➡️ 110°C for 40 minutes.
    ➡️ 160°C for 5~10 minutes (Until top is brown)
    11. Once cake is removed from oven, drop tin on counter again for a few times to release hot air.
    12. Transfer Cupcakes into a cooling rack.
    ⚠️ Every oven and temperature is different too. Therefore baking time may vary depending on your oven's heat.

    材料 (12個):

    2.篩入麵粉和玉米澱粉。攪拌混合併放在一邊。
    3.在另一個大碗中,將檸檬汁加入蛋白中。 (這是為了穩定我們的蛋白)
    4.用手動打蛋器低速打蛋清至起泡。
    5.分3次加入糖繼續打至硬性發泡。
    6.將蛋白折疊成麵糊,一次1/3蛋白。
    7.將麵糊轉移到模具中。
    8.放入預熱好的烤箱。
    ➡️ 110°C 40 分鐘。
    ➡️ 160°C 5~10 分鐘(直到頂部上色)
    11. 一旦蛋糕從烤箱中取出,再次將錫放在櫃檯上幾次以釋放熱空氣。
    12. 將紙杯蛋糕轉移到冷卻架上。
    ⚠️每個烤箱和溫度也不一樣。因此,烘烤時間可能會因烤箱的熱量而異。

      On Which temperature you baked them?
      According to my oven thermometer, lowest 100c gives 130c temperature.
      Did you use only bottom rods?
      Fan was Off?

    My oven lowest temperature 100c without fan , only bottom rods gives 130c temperature.
    So i put them bake at 130c?

    I have a question though as I this is my first time baking...I thought all chiffon cakes or chiffon cupcakes had to be turned upside down immediately after removing from the oven. Is this true? Or were these cupcakes turned over too?

      You are most welcome! Do give it a try and let me know how it turns out! 😊 Yes, it is advisable that you turn chiffon cakes upside down. Drop the cake tin afew times onto countertop to release hot steam once the cake is out from oven. Turn it upside down with a stand of just balance the edges with 2 bowls and let it cool down completely. I didn't turn these upside since they are just cupcakes. 😂

      Hi there!
      Preheated your oven at 110°C
      1st, Bake at 110°C for 40 minutes.
      After that, turn up temperature to 160°C and bake for another 5~10 minutes (Until top is brown)
      Total baking time should be about 50 minutes.

      @@memasavvy6789 I have not tried personally, however, not too advisable to mix alot of cheese within the batter. In case the batter is too heavy and can't rise properly. Maybe u can scope half the amount of batter onto the cup, then add abit of the shredded cheese in the centre and top up the rest with other half of batter. This is just my suggestion. Do feel free to try and let me know how it turns out! 🥰

      Hi there!
      1st you preheat your oven at 110°C
      Bake 110°C for 40 minutes.
      Then turn up temperature to 160°C and bake for another 5~10 minutes (Until top is brown)

      For chocolate flavour, add 10g of cocoa powder+58g of cake flour (instead of 68g).
      For pandan flavour, add 1tbsp pandan essence.

    Tried this today. Came out perfect like in the video but I added 10g more of sugar and vanilla extract cause i figured it would be quite bland for me.

      If possible, try to use cake flour aka low gluten flour. In order to make a good chiffon cake, we always try to minimise the gluten within the batter. Thats why it's best to use cake flour rather than AP flour. Corn starch can help further reduce the gluten. Also, try not to keep stirring the batter as this will create more gluten too.
      If you really can't get cake flour at your region, then use 58g of all purpose flour + 20g of corn starch (instead of 10g).
