  • Mauby is one of the most popular, if not the most popular drink across the Caribbean. It is as polarizing as it is popular. receiving strong emotions on both ends of the spectrum, you either love it or hate it. Mauby is made from the bark of the tree known as Colubrina Elliptica, Mabi or Soldierwood.
    Mauby is known for its bitter taste which comes from the mauby bark itself but it also has signature licorice flavor that comes from incorporating spices like aniseed and star anise.
    Although mauby concentrate mixes are widely popular and have huge commercial success, spice packs are still sold to this day in markets and select groceries across Trinidad & Tobago and the Caribbean.

    Hi All! In Puerto Rico we take the mauby which we call maví or mabi and we ferment it under the sun. After it ferments for a few days it gets lighter in color, less sweet and a hint of liquor taste and much more potent and flavorful tastes Bomb!!! 💣

      You can also use some small, washed, sliced,pieces of ginger to the boiled Mauby. Leave overnight sweeten next day, Can add kola, almond mixed essence for an enhanced flavor.

    Oh boy, I can taste it already. I crave this drink. My mother hailed from St. Vincent and the Grenadines. Mauby was amoungst one of her favourite drinks she used to make. Oh how I wish I could get some bark right now. Too bad we cannot get it in Europe.

    Thank you chef you always give a full and complete description in all your recipes. When it comes to mauby and certain drinks I really love I have to make it myself cause I only goes back for more and more.

    Thank you for this video. Your description and thought process made Mauby make sense to me. Now I have a nice refreshing alternative to Iced Tea and my rum-based drinks, but the rum itself is also a nice addition here! When I made my first batch I was surprised by the flavor (I'd never had Mauby up here in Nebraska in the USA). I added a few grains of champagne brewers yeast and have been recycling the last few ounces of Mauby into every new batch. Several batches later and it is now golden, a bit cloudy, and refreshingly effervescent and frothy! I even went so far as to use a similar spice blend in some Wray & Nephew to make Mauby Bitters for my cocktails. Thanks again for the inspiration!

    Glad I found this video. My parents were from Puerto Rico and my dad used to bring this home when I was a kid.

      I think you just have to leave it in a sterilized bottle or jar at room temperature for some days.

      In my opinion they have a slightly different flavor profile but they are both cinnamon.
