    INGREDIENTS:
    For Filling:
    * Oil(तेल) - 2 Tbsp
    * Cumin Seeds(जीरा) - 1/2 Tsp
    * Asafoetida(हींग)
    * Green Chili(हरी मिर्च)
    * Onion(प्याज)
    * Coriander Seeds(सूखा साबुत धनिया) - 1 Tbsp
    * Fennel Seeds(सौंफ) - 1 Tbsp
    * Cumin Seeds(जीरा) - 1 Tsp
    * Salt(नमक) - As per taste
    * Turmeric Powder(हल्दी पाउडर) - 1 Tsp
    * Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1.5 Tsp
    * Gram Flour(बेसन) - Less than 1/2 Cup
    * Potato(आलू) - 3 Boiled & Mashed
    * Sugar Powder(चीनी पाउडर) - 1 Tsp
    * Citric Acid/Mango Powder(साइट्रिक एसिड/अमचूर पाउडर) - Some
    * Coriander Leaves(धनिया पत्ती)
    * Oil(तेल) - For frying
    For Dough:
    * White Flour/Maida(मैदा) - 1/2 Cup
    * Wheat Flour(गेहूं का आटा) - 1/2 Cup
    * Salt(नमक) - Some
    * Water(पानी)- As required
    * Ghee(घी) - Some
    For Bhaji:
    * Tomato(टमाटर)
    * Onion(प्याज)
    * Capsicum(शिमला मिर्च)
    * Ginger(अदरक)
    * Green Chili(हरी मिर्च)
    * Coriander Leaves(धनिया पत्ती)
    * Potato Filling(आलू भरना)
    * Red Chili Powder(लाल मिर्च पाउडर)
    * Dried Mango Powder(अमचूर पाउडर)
    * Garam Masala(गरम मसाला)
    * Salt(नमक)
    * Mayonnaise(मेयोनेज़)
    For Serving:
    * Cheese(चीज़)
    * Paneer(पनीर)
    * Chat Masala(चाट मसाला)
    * Onion(प्याज)
    * Chilli Flakes(चिल्ली फलैक्स)
    * Coriander Leaves(धनिया पत्ती)
    * Mayonnaise(मेयोनेज़)
    * Chutney(चटनी/सॉस) - Green & Red
    RECIPE:
    For Masala, keep the pan on the flame, put Coriander Seeds, Fennel Seeds, Cumin Seeds. Roast them, then turn the flame off and take them out on a plate and coarsely grind them.
    * For Filling, in the same pan, put some Oil, Cumin Seeds, Asafoetida, Chopped Green Chilli, Chopped Onion, Grounded Masala, Salt to taste, Turmeric Powder, Kashmiri Red Chilli Powder and mix them well. Then add Gram Flour to it and cook it well for 3-4 minutes. After then put Boiled & Mashed Potato, Powdered Sugar, Citric Acid. Mix them all & put Coriander Leaves. Take out the ready filling on a plate and keep it for cooling down.
    keep the strainer in a bowl, put White Flour/Maida, Wheat Flour & Sieve them. Add some Salt and bind the dough by adding water. Apply some Ghee to it, cover it and keep it for 15-20 minutes. Then make a big dough ball, then roll it. Put Filling in it and make paratha.
    On Tawa, put Butter/Ghee and roast it. Take same Tawa, put some veggies like - chopped Tomato, Onion, Ginger & Green Chilli, put some Potato Filling, Red Chilli Powder, Dried Mango Powder, Garam Masala, Salt, some Mayonnaise. Mix them and mash them well. Then cut the Cooked Paratha in Pizza Shape, Apply Bhaji on it and sprinkle some Cheese and Paneer, some Chat Masala, chopped Onion, Chilli Flakes. Garnish it with Chopped Coriander Leaves. Serve it with Mayonnaise, Red Chutney, Green Chutney and Sauce. In this way, Surat Famous Raja-Rani Paratha will get ready at home.
