Interesting trick, one that has been learned as folks finding it hard to clean and looking for a easier/better way. Those carpet razors cut anything for sure! I myself, not to say my way is better, but using a normal filet knife, the trick is cutting from the underside out on the skin. How one might ask? So first start by inserting the sharp edge of your filet knife into the flexing area on the top dorsal fin, once penetrated, then just slide your filet knife forward and/or aft with the knife at an angle to cut from the underside out. Not too much angle of course. Just a little. It takes some practice, but the key here is cutting from the underside of the skin outwards. Cheers! 😁
