EGGLESS COFFEE VANILLA BATTENBERG TEA CAKE | Best Eggless British Tea Cake Recipe

  • Eggless Coffee & Vanilla Battenberg Cake... Yet another favourite bake, this time from the UK. Earlier, I made the Frasier from France and the Zucotto from Italy as I virtually trot around the globe. Those recipe videos can be found on IGTV.
    Thought I'd make an eggless version of the Battenberg in the exciting new 48SS Digichef Digital Oven from @morphyrichardsIndia. I first baked this tea cake way back in 2012, and am happy to say this version is just as delicious!
    The cake is wrapped in chocolate plastique which is edible of course and definitely yum. It's an interesting and satisfying baking project to undertake especially since a lot of us are under yet another lock down. Please stay safe, and happy baking!

    Oh my God. I have been wanting to make a battenberg cake for ages now. Never got the confidence to try one, but your recipe is so delightfully simple that I have to make it. Just need to get my hands on some corn syrup

      Yayyyy, that's brilliant. I bought mine on Amazon, Karo Light. A little goes a long way. You could Google for a homemade recipe otherwise.😘

      You are most welcome. You can make chocolate decorations out of it, or top petite tea cakes with it. I think you could also play with ingredients nd make it into a frosting.

    Looks so beautiful and 😋.Buttermilk is Amul buttermilk or milk plus 1tsp vinegar

      Hey Shweta, thank you so much. That's really nice of you 🙏. I don't think you can substitute corn syrup here. I bought mine on Amazon, Karo Light. A little goes a long way. You could Google for a homemade recipe otherwise. Alternatively, try marzipan to cover the cake.

      Buttermilk is plain chaach/ Amul buttermilk. Or 1 tsp vinegar/lime added to 1 cup milk. Let it stand for 5 minutes to curdle, then measure and use.
