- How to make the most amazing Cauliflower Cheese recipe. This cauliflower cheese recipe is extremely easy, cheap and fun to make, making it a winner for the perfect side dish to a huge variety of different main courses. Ingredients -
For The Cauliflower -
1 (950g - 2.1lb) - Cauliflower, Cut Into Florets
1 Tbsp (15ml) - Olive Oil
Salt & Pepper
For The Béchamel (White Sauce) -
100g (3.5 oz) - Unsalted Butter, Cubed
50g (1.7 oz) - Plain All Purpose Flour
420ml (14.2 fl oz) - Full Fat Milk
420ml (14.2 fl oz) - Thickened Cream (AKA - Heavy Cream, Full Fat Cream, Pourable Double Cream and Whipping Cream)
1 tsp (5g) - Sea Salt Flakes
1 tsp (1g) - Nutmeg, Freshly Grated
120g (4.2 oz) - Matured Cheddar Cheese, Freshly Grated
80g (2.8 oz) - Gruyere Cheese, Freshly Grated
Optional -
Grated Matured Cheddar Cheese Grated Over The Top
Important Notes -
- This recipe can be made a day or two in advance. Once you get to the step of pouring on the cheese sauce, it can be placed in the fridge for a later date. When you're ready to cook it, pull it out of the fridge, allowing it to sit for 15 minutes to get to room temperature and bake as per instructions.
- This recipe can be made without the cream. Simply use 420ml (14.2 fluid ounces) of full fat milk as a substitute. This will equal to 840ml (28.4 fluid ounces) of full fat milk in total.

Love that you roasted the cauliflower instead of boiling or steaming it it looks delicious
I've been making this for years. A bit of Dijon mustard and some Worcestershire sauce really bring out the flavour. For a quicker version I microwave the cauliflower till it's just starting to get tender, instead of roasting. By adjusting your cheeses this sauce also works for mac and cheese.
I'm no chef not even a competent home cook but following this (and other) recipes from Jack I knocked it out of the park. You've inspired me and given confidence to push on. I just love your channel and recipes, thank you Jack for being so awesome.

What’s happening everyone …
Today I’m trawling CZcams for the unhealthiest way to prepare cauliflower. Think I’ve struck gold here : pint of cream, half a slab of butter, as much cheese as you can shake a stick at. Hard to know where I can take this, but since everybody else is aiming for the next level, I’m thinking of working in some bacon, and topping off with crushed crisps ( potato chips, or maybe tortilla chips ) and shavings of beef dripping for extra crunch and flavour. Served with, you guessed, chips ( fries ). Deep fried, obviously.
I made this at christmas . I love cauliflower cheese anyway, but this was an absolute triumph everyone loved it .luxurious and by far the best cauliflower cheese ever. Thankyou a great recipe

OK, like many, I am struggling through this pandemic, as I am one of the people with seriously bad lungs and so am spending alot of isolated time by myself, almost daily I hear someone tell me, ...."you have to stay at home because if you get it you won't make it" I have my boyfriend come and no one else and have to admit it's getting to me. I finally got around to making this. I followed Jack’s recipe, EXCEPT: I didn’t have enough heavy cream, so I substituted whole milk. I added one TSP of Coleman’s dried mustard. The result was a dish with a mild, pleasing flavor. I recommend sharp cheddar cheese (that’s what I used.) The nutmeg adds a nice background flavor note, so don’t eliminate it. Also, I believe that larger - rather than smaller - florets work best. I didn’t end up with the browned top Jack showed, but it was close after 38 minutes in the oven. This is easy to make.

Someone near and dear to me who is no longer on this earth used to make a Southern American version of this. I referred to a few of my cookbooks and a website that is Southern as such and I couldn't find anything. This recipe is the closest, I made it and can I tell you it's delicious! It could easily replace mashed potatoes on a holiday table. Thank you.

Love this. Note as cream, Dijon mustard, flat field mushrooms, and serve with crispy streaky bacon, and lots of buttered toast. I also have times toms too. Somehow this whole thing works a treat. Been a family staple for the cold and damp winter months for years. I am really hungry now!!!! Great vid.

Cauliflower Cheese was a stable i was raised on and still a favourite; I make a version of this for food taken to camp, I just add the cauliflower grated rather than florets, this dehydrates better for camp meals/ trail food. I add English Mustard to the sauce as well as Worcester Sauce and two drips of Tabasco for added heat; On a cold night in Autumn or winter camping under the stars it's comfort food with bells on. (I make my bechamel a bit different to, I use herbs to flavour the sauce in it's making, old school). In fact I make this as a sauce for Macaroni Cheese, then dehydrate and place in a heat proof bag, with a label that says how much water is required to revive the dish and cook it in my titanium pan at camp.

I add breadcrumbs to the top for a little crunch, with some rosemary and garlic, blitzed with olive oil.

I make a cauliflower cheese with a blue stilton and chilli sauce in the same way and it's awesome, pre baking the florets makes such a difference, adds flavour and texture.
